BUCKEYES I
This recipe is so good that I double it whenever I make it. Since it is peanut butter balls dipped in chocolate it is almost like candy. Real buckeyes are nuts that grow on trees and are related to the horse chestnut.

Steps:
- In a large bowl, mix together the peanut butter, butter, vanilla and confectioners' sugar. The dough will look dry. Roll into 1 inch balls and place on a waxed paper-lined cookie sheet.
- Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until firm, about 30 minutes.
- Melt chocolate chips in a double boiler or in a bowl set over a pan of barely simmering water. Stir frequently until smooth.
- Dip frozen peanut butter balls in chocolate holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Put back on the cookie sheet and refrigerate until serving.

BUCKEYE BALLS
Peanut butter balls dipped in chocolate. They look like buckeye nuts. Absolutely delicious!

Steps:
- Combine the melted butter or margarine, confectioners' sugar, peanut butter and the vanilla together and mix well. Refrigerate for 1 hour or until firm. Roll into 1 inch balls and place on waxed paper.
- In the top half of a double boiler melt the chocolate chips and shortening, stirring constantly. Use a toothpick to dip balls into the melted chocolate, leaving a small uncovered area so balls resemble buckeyes. Place balls on waxed paper. Use fingers to blend in toothpick holes. Refrigerate until chocolate is firm. Enjoy!

- In a large bowl, beat the sugar, peanut butter and butter until smooth. Shape into 1-in. balls; set aside. , Microwave chocolate chips and shortening on high until melted; stir until smooth. Dip balls in chocolate, allowing excess to drip off. Place on a wire rack over waxed paper; refrigerate for 15 minutes or until firm. Cover and store in the refrigerator.

BUCKEYE BALLS II
These are chocolate-covered balls of peanut butter and confectioners' sugar.

Steps:
- Line a baking sheet with waxed paper; set aside.
- In a medium bowl, mix peanut butter, butter, vanilla, and confectioners' sugar with hands to form a smooth stiff dough. Shape into balls using 2 teaspoons of dough for each ball. Place on prepared pan, and refrigerate.
- Melt shortening and chocolate together in a metal bowl over a pan of lightly simmering water. Stir occasionally until smooth, and remove from heat.
- Remove balls from refrigerator. Insert a wooden toothpick into a ball, and dip into melted chocolate. Return to wax paper, chocolate side down, and remove toothpick. Repeat with remaining balls. Refrigerate for 30 minutes to set.

BUCKEYE BALLS
A friend of mine gave me this recipe many years ago and we would make dozens of them for our Christmas trays every year. They were the first things to go.

Steps:
- Mix first 3 ingredients together.
- Roll into 1" balls and place on waxed paper lined cookie sheet.
- Refrigerate 2 hours or overnight.
- Melt chocolate chips in double boiler with oil.
- Stick toothpick in center of peanut butter ball, dip in chocolate about 3/4 of the ball, leaving a small amount of the peanut butter ball showing. Put back on waxed papered cookie sheet, remove toothpick. Refrigerate until set.
- Keep in sealed container in cool place. The yield depends on how large you make the balls. Cooking time is actually refrigeration time.

- To a stand mixer add the peanut butter, butter, vanilla and powdered sugar and beat it until it forms a stiff dough then then roll the dough into balls made with 2 teaspoons of dough.
- Put the balls on a baking sheet lined with parchment paper then refrigerate for at least an hour before using a microwave safe bowl to melt the chocolate and shortening in 30 second increments until fully melted (mix in between each 30 seconds, for 60-90 seconds total).
- Dip the balls almost all the way leaving the eye of the peanut butter ball showing before scraping the fork across the lip of the bowl to remove excess chocolate and using a toothpick to push the buckeye ball onto the parchment paper to harden for at least 30-45 minutes in the refrigerator before eating.
