Steps:
- Bring water to a boil in a covered saucepan. Add butter, cumin, raisins, currants, zest, and rice. Stir the rice and return to a rolling boil. Cover and reduce heat to low. Cook 20 minutes, stirring occasionally.
- Remove from heat and add chives. Fluff rice with fork and transfer to a serving dish. Cover rice liberally with toasted sliced almonds or smoked almonds.
SPECIAL FRIED RICE
Twist on the typical fried rice found at a typical Chinese restaurant. Any meat can be used, but goes best with shrimp, bacon, spam, ham, Chinese sausage, or pork. If each step is carefully followed, and the pan is always HOT when cooking, then this fried rice is sure to be a hit!

Steps:
- Heat 2 teaspoons canola oil in a large wok or skillet over high heat until smoking.
- Beat eggs and water together in a bowl until smooth. Pour beaten egg mixture into the skillet, let it cook in the oil briefly to begin to firm, and then scramble lightly with a wooden spoon until the eggs are cooked and shiny, 2 to 3 minutes. Remove cooked eggs to a plate.
- Pour 1 teaspoon sesame oil into the hot pan. Add enough canola oil to cover the cooking surface of the pan and heat to smoking. Saute onion and garlic in oil until fragrant, 1 to 2 minutes; add peas and carrots and cook until hot, 1 to 2 minutes more. Return cooked eggs to the pan.
- Gradually add rice to the skillet, breaking and tossing chunks to break into individual grains and mixing with vegetables; cook and stir until the rice starts to turn a slight brown color and is completely hot, 2 to 3 minutes.
- Stir soy sauce, fish sauce, sriracha sauce, sugar, salt, 1/2 teaspoon white pepper, and monosodium glutamate into the rice mixture; continue to cook and stir until the grains of rice are no longer sticking together, 2 to 3 minutes more. Remove pan from heat and sprinkle green onion and cilantro over the fried rice; toss to mix.
- Peel outside skin of cucumber with vegetable shredder to create a ragged design on the outside. Slice cucumber diagonally and arrange in a circle around the serving platter. Serve rice in middle of platter, topping with additional green onion and a dash of white pepper.

SHADOW'S RED BEANS AND RICE
CAJUN : Source: Shadows, adapted from the "Frugal Gourmet". File' may be found in most ethnic markets ( it is a sassafras based seasoning). There has been debate about the use of "Bay Leaf" in the original southern recipes for this dish, I have found it used and not used... Cooking time does not include overnight soak.

Steps:
- Soak the beans overnight in water to cover.
- Drain and place in a heavy kettle.
- Add the ham,onion,celery,parsley, bay leaves, and garlic, and add water to the pot barely to cover contents.
- Bring to a boil, and then turn to simmer.
- Simmer uncovered for 2 hours.
- You may need to add a little water to keep from sticking.
- After the first 2 hours of cooking, add the butter, pepper, Worcestershire, and tabasco to the pot.
- Cover and cook on very low heat for 1 more hour.
- Serve over white rice cooked the following way:.
- This step should be preformed while the beans are cooking.
- Raw rice.
- Rinse rice 3 times in cold water.
- Add chicken boulion cube.
- Add tabasco sauce.
- Add file'.
- Bring rice to boil over medium high heat in water with boulion, tabasco, and file'.
- When bubbles disapear from the surface of the rice turn heat to low and cover.
- Let let cook for 20 minutes on this low heat.
- Remove from heat and let stand for at least 10 minutes but not more the 30 minutes.

SPECIAL INDIAN BASMATI RICE
This special rice tastes great with any Indian meat, fish or vegetarian curry.

Steps:
- Measure out 1 mug white basmati rice. Put it a bowl and top up with cold water. Soak the rice for 10 mins, then wash THOROUGHLY in a sieve until water runs off clear
- Heat the oil in a small pan and add all the dry ingredients except for the turmeric. Gently fry on a low heat for 3 minutes.
- Add the turmeric, stir and then add the rice. Stir thoroughly.
- Add the water and bring to the boil. When boiling, put the lid on the pot and turn down the heat to simmering.
- Simmer the rice for 20 - 25 minutes and try and resist peeping into the pot. The steam building up under the lid is important for the cooking process of this rice.
- Lift the lid after 20 minutes to check if all the water has been absorbed. If so, remove the "bits", most of them will have collected at the top of the pan. If there's still any water left in the bottom of the pan, simmer for another few minutes.
- Stir through and enjoy alongside your favourite curry.
- You can also keep this rice hot in the oven (100 degrees celsius) for an hour or so which will make the rice more grainy and less sticky.
