BUNRATTY CASTLE PORK RIBS

My husband and I had our wedding reception at Bunratty Castle in County Clare, Ireland. We enjoyed a wonderful meal and medieval entertainment. These ribs were served at the banquet.

Steps:

  • Cover ribs with cold water in a large pot.
  • Bring to a boil, then cover and reduce heat to simmer.
  • Cook until fork tender, about 1 hour, skimming the water occasionally to remove the.
  • foam.
  • Transfer to a large baking pan.
  • Preheat oven to 350°F.
  • To make the sauce:.
  • In a medium saucepan over medium heat, heat the oil and cook the onion and garlic until soft, about 3 minutes.
  • Stir in all the remaining ingredients except the demi-glace or concentrated chicken broth and bring to a boil.
  • Cook until the sauce reduces by half, 10 to 15 minutes.
  • Stir in the demi-glace. Pour half the sauce over the ribs and bake, turning once, until the ribs begin to brown, 30-40 minutes.
  • Slice the meat into 4 or more ribs per person and serve with remaining sauce.

4 cups homemade chicken stock or 4 cups canned chicken broth
1/2 cup demi-glace or 1/2 cup condensed chicken broth

  • Preheat oven to 375 degrees Slice the ribs into individual pieces In a large bowl, combine the honey, soy sauce, vinegar, garlic and brown sugar Stir until honey and sugar are completely dissolved then stir in the baking soda.
  • The mixture will begin to foam.
  • Transfer ribs to the bowl, and turn to coat Cover a cookie sheet with foil and arrange ribs meat side up on the sheet Pour excess sauce over the ribs and sprinkle with the garlic salt.
  • Bake for 1 hour turning every 20 minutes.

Sweet Sticky Pork Ribs image

Steps:

  • For sauce, melt butter in a 2 quart saucepan. Add ketchup, pineapple juice, brown sugar, onion, molasses, paprika and garlic powder. Boil for 5 minutes. Transfer to a large bowl and cover. Set aside.
  • Place ribs in a large stockpot. Cover with water. Bring to a boil. Reduce heat and simmer for 20 minutes or until cooked through and no longer pink.
  • While ribs are simmering, prepare a charcoal grill. When coals are hot, push them to one side of the grill.
  • Drain ribs. Using tongs, dunk ribs in sauce to coat. Place on grill. DO NOT PLACE THE MEAT DIRECTLY OVER THE HOT COALS. Cover grill and cook for 10 minutes. Using tongs, dunk each rib in sauce again and grill covered for an additional 10 minutes.
  • Serve with plenty of napkins.
