BUSTER BAR DESSERT

This is my favorite dessert. This recipe came from my boyfriend's Mom. The cook time listed is actually the approximate freeze time.

Steps:

  • Cookie Crust: Crush 1 pkg of Oreo cookies and mix in melted butter.
  • Press into the bottom of a 9x13-inch pan.
  • FREEZE.
  • Ice Cream Layer: Cut square sized vanilla ice cream into equal strips.
  • Layer ice cream on top of cookie crust.
  • Press salted peanuts into ice cream (optional).
  • FREEZE.
  • Topping: For approximately 8 minutes, gently boil semi-sweet chocolate chips, powdered sugar, butter and evaporated milk together.
  • After boiling, stir in 1 tsp vanilla.
  • Let the chocolate cool and pour over ice cream layer.
  • FREEZE.
  • After chocolate layer is frozen, cut into squares to serve!
  • (You may have to let it sit on the counter for a while to thaw slightly before cutting).

1 (18 ounce) package Oreo cookies (crushed)
1/2 cup butter
1/2 gallon vanilla ice cream (square size)
1 1/2 cups salted peanuts (optional)
2/3 cup semi-sweet chocolate chips
2/3 cup powdered sugar
1/2 cup butter
1 1/2 cups evaporated milk
1 teaspoon vanilla

This "Buster Bar Freeze" is beyond words, after tasting this at a friends BBQ last summer, I was hooked. I just recently got the recipe from her, and just couldn't wait until the summer to post it, but don't wait until then to make it, this is a decadent dessert for any season--you will love this! (Note: prep time includes freezing time).

Steps:

  • Prepare a 13x9-inch baking dish.
  • In a processor or a blender, crush the Oreo cookies.
  • Mix the crushed cookies with the 1/2 cup melted butter.
  • Press all, (but reserve 3/4 cup of crushed cookies for the top), in the bottom of baking pan; freeze in the freezer for half an hour, or until solid.
  • Remove from freezer and spread the softened ice cream over crust; sprinkle pecans over the ice cream; freeze until solid.
  • In a heavy saucepan, mix evaporated milk, 1/2 cup solid butter, chocolate chips and powdered (icing) sugar; bring to a boil over medium heat stirring constantly; boil for 8 minutes, remove from heat, cool to lukewarm (almost room temperature).
  • Remove the baking pan from the freezer and pour over the nuts; freeze again.
  • Spread Cool Whip topping over frozen mixture in pan, then sprinkle with the reserved crushed cookies.
  • Keep frozen until 5 minutes before serving.

  • Layer on the softened vanilla ice cream into the bottom of 10-12 (3 ounce) dixie cups. Freeze 30 minutes to 1 hour.
  • Spoon 2-3 teaspoons of the fudge sauce and 1-2 teaspoons of caramel over the vanilla ice cream and sprinkle with chopped peanuts. Layer on the chocolate ice cream and then over the ice cream, spoon another 1-2 teaspoons of caramel. Freeze 15 minutes and then remove and insert popsicle sticks. Freeze until completely firm, at least 4-6 hours or overnight.
  • Combine chopped chocolate and coconut oil in a medium sauce pan over medium heat. Stir frequently until chocolate is almost melted. Remove from heat and stir until completely melted and smooth. Allow to cool 15-minutes before dipping the bars.
  • Remove the bars from the freezer one at a time. Peel away the dixie cups and dip the bottom caramel layer of each bar into the remaining chopped peanuts, pressing the peanuts firmly into the ice cream to adhere.
