BACON-WRAPPED JAMAICAN JERK PORK TENDERLOIN
A zesty, flavorful take on an old favorite. Very easy to make in about an hour's time! You could also top with diced jalapeno peppers, if desired.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Combine brown sugar, jerk seasoning, paprika, thyme, oregano, seafood seasoning, and crushed red pepper in a bowl; rub generously all over the tenderloin. Wrap with bacon and secure with toothpicks. Coat lightly with oil and place in a loaf pan or casserole dish. Sprinkle any remaining spice rub on top, cover with some diced onion, and surround with remaining onion.
- Bake, uncovered, in the preheated oven until pork is slightly pink in the center, 45 to 60 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

JAMAICAN JERK PORK LOIN
This is a compilation of several recipes for "Jerk Pork" that I've tried. I don't claim that it has any Jamaican authenticity at all, but we really like it. It's important to find a pork loin (not the tenderloin) that has a nice fat layer on top... it really keeps the moisture in and makes for a very nice presentation when it's browned and crisp. I made this for my mother's friend birthday party, for a crew of very discriminating palates and they went nuts. Prior to that, I didn't have a written recipe for this, but I had demands for the recipe so I had to measure as I re-created it! I hope you enjoy.

Steps:
- Marinade:.
- Put all marinade ingredients into a food processor and process until thoroughly chopped but not to the point that it turns into a paste or too liquid.
- Put marinade into a large sealable plastic bag (like a Ziploc bag).
- Meat Preparation:.
- Lightly score the fat layer of the pork loin.
- Place meat in bag with marinade.
- Marinate up to 8 hours in the refrigerator, turning occasionally.
- Heat oven to 375°F.
- Remove pork from marinade.
- Wipe most of marinade off of pork leaving some on fat layer to brown.
- Roast uncovered, fat side up, for approximately 1 hour (until internal temperature reaches 137°F).
- If the top gets too browned, cover for a few minutes, but uncover at the end of cooking time.
- Allow to rest at least 15 minutes before slicing.
JAMAICAN JERK PORK LOIN
Steps:
- Preheat oven to 350 degrees F.
- Mix jerk seasoning with the oil in a small bowl (this will thin it and cut the heat). Trim any excess fat from the pork loin, leaving a thin-layered wide strip down the center of the top. Evenly rub the entire pork loin with the jerk seasoning mixture. Place pork loin in a shallow greased roasting pan, and bake for 20 minutes. Then reduce the temperature to 300 degrees F and continue baking for about 1 more hour, or until a meat thermometer stuck in the thickest part reads 145 degrees F. Remove from oven and let rest for at least 10 minutes before slicing.

GRILLED JAMAICAN JERK BONELESS PORK WITH ROASTED BANANA MANGO SALSA

- Preheat oven to 350 degrees F.
- Pat the pork dry with a paper towel and rub 3 tablespoons of jerk seasoning on the meat. Let marinate for 45 minutes at room temperature, covered.
- After 45 minutes have passed, rub the meat with the olive oil, put on a baking sheet, and bake for 45 minutes. Let rest for 10 minutes.
- On another baking sheet, roast the bananas until they begin to caramelize, about 25 minutes. Set aside and let cool.
- In a bowl, combine the mango, jalapeno, red onion, lime juice, cilantro, and bananas.
BUTLER'S JAMAICAN PORK LOIN
Steps:
- Marinade/Rub Preparation: Combine brown sugar, rum, garlic, cloves, salt, pepper, ginger, and bay leaves. Blend to brown paste. If it is dry and crumbly add more rum (you can add more rum even if its not dry and crumbly). Loin Preparation: Rinse off loin and pat dry. Lightly score fat side of loin. Split loin almost in half length-wise (horizontally). Open out the meat as you would a book. Cut a length-wise pocket down the center of each side, starting and ending about 1/2 inch from each end and almost all the way through to the other side. Spread half of the brown sugar paste over the surface and into the pockets of the opened out loin. Bring the sides together so the meat resumes its original shape. Spread the remaining paste over the entire surface of the loin. Wrap the loin with the peels of the 4 bananas. Tie the loin at 1 inch intervals with butcher's string. loosely cover in plastic wrap and marinate for a minimum of 1 hr. Bring to room temperature while preheating grill. Preheat grill to high and set up for rotisserie (Middle burner off with drip pan in center). Skewer the loin length-wise on the rotisserie spit. Rotate on the grill until cooked through (1-1 1/2 hours or internal temperature of 160˚F). Transfer to platter and let rest for 5 minutes. Remove string and cut loin into thin cross-wise slices.

- Combine lime juice and next 5 ingredients in a large heavy duty, zip top plastic bag.
- Add pork; seal bag, and marinate in refrigerator for 30 minutes.
- Remove pork from bag, reserving marinade.

- For brine, in a stainless-steel or enamel stock pot or plastic container large enough to hold the roast combine pineapple juice, salt, brown sugar, rum, and jerk seasoning; stir to dissolve the salt. Carefully add pork. Cover and marinate in the refrigerator for at least 12 hours or up to 14 hours, turning pork occasionally.
- Remove meat from brine; discard brine. Rinse roast and pat dry with paper towels. Insert a probe-type or ovenproof meat thermometer into center of meat.
- Prepare grill for indirect grilling. Test for medium heat above the drip pan. Place pork on the grill rack over the drip pan. Cover and grill for 1 to 1-1/4 hours or until meat thermometer registers 155 degree F. Add additional coals as needed to maintain temperature.
