PEANUT BUTTER ROLLS
Reach for this recipe when you're looking for a change from typical cinnamon rolls. The unique combination of confectioners' sugar, peanut butter and coffee in the frosting is finger-licking good.

- In a large bowl, dissolve yeast in warm water. Add the milk, sugar, shortening, salt, eggs and 3-1/2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45 minutes. , Punch dough down. Turn onto a lightly floured surface; divide in half. Roll each into a 14x9-in. rectangle. Spread 1/3 cup peanut butter to within 1/2 in. of edges. , Roll up, jelly-roll style, starting with a long side; pinch seam to seal. Cut each into 12 slices. Place, cut side down, in two greased 13x9-in. baking pans. Cover and let rise until doubled, about 1 hour. , Bake at 375° for 20-25 minutes or until lightly brown. Combine frosting ingredients until smooth; frost warm rolls. Cool in pans on wire racks.

BUTTER ROLLS, OLD SCHOOL
This is the recipe that my grandma and my mother would make when we all had a craving for sweet and butter all rolled in to one. It is my favorite quicky dessert. Enjoy!

- 1. Preheat oven to specifications on biscuit pack, usually 325-350 degree's. Butter bottom and sides of a 9x13 baking dish.
- 2. Open biscuits, roll out a biscuit to a 3" round, add 1 teaspoon of butter to the center and then add sugar. I use a teaspoon and sprinkle sugar over the butter to cover it, I do not use a whole teaspoon of sugar. Fold biscuit in half, and seal edges, you will have a bumpy half moon shape. If you want to make it decorative you can pinch together like a pie crust. The idea is to seal the butter and sugar inside. Place in baking dish. Repeat for all remaining biscuits.
- 3. Once you have all of your rolls made, place in oven and bake for 25-30 minutes or until golden brown. While they are baking you can mix up the sauce. To keep cornstarch from lumping up, I mix cornstarch with the sugar, then I add it to the sauce, stir sauce until sugar is dissolved, and set aside. Once done, remove rolls from oven, do not turn off the oven. Stir sauce one last time and then pour over rolls. Place rolls back in the oven and bake until sauce is bubbling and thickened, about 15-20 minutes.
- 4. You can serve warm or let cool before serving. Add a scoop of vanilla ice cream, or your favorite ice cream, or serve as is. Yummy to my taste buds, :D! Enjoy!
- 5. **NOTE** If you are making this dish for only 2, you can use just one can of biscuits and cut sauce ingredients in half, it will still be delicious. I have also had people ask about making this recipe without the sugar. It might be possible to substitute sugar for splenda. You might have to use the splenda that is measured same as cup of sugar. OLD-FASHIONED SOUTHERN BUTTER ROLLS
This is a very old recipe. I've read that butter rolls may have originally come about as a way for Southern cooks to use up biscuit dough scraps. Whatever the history behind this old-timey treat, it's one of my favorite comfort foods. Try adding finely chopped apple to the filling.

- Preheat oven to 350. Grease a large baking dish; set aside.
- In a large bowl, combine flour and salt. Cut shortening in until mixture looks like course crumbs. Add water, and stir just until combined. Use your hands to press dough together until it forms a ball.
- Turn out onto a floured surface, and roll dough out into a large rectangle. The dough should be rolled fairly thinly, like you would dough for cinnamon rolls. Spread butter evenly over the top, then sprinkle with 1/4 cup sugar and nutmeg. Roll up tightly, and pinch ends to seal. Cut into 12 equal slices. Place cut side down in baking dish.
- In a saucepan, heat 2/3 cup sugar, milk, and vanilla until bubbles form. Remove from heat, and pour over top of rolls. Bake 30-40 minutes.
- *Note: These rolls can also be made without the milk sauce if you'd like, with a little milk or cream being poured over individual servings instead.
OLD FASHIONED KENTUCKY PEANUT BUTTER ROLL
My grown children say the holidays are just not the same if I do not make this candy. It may take a couple of times making this to master it, but friends it's well worth it!!!!

- 1. First beat the 3 egg whites until stiff. Next prepare the surface to roll out the candy. Cover the surface with wax paper and spread a thick layer of powdered sugar. Next mix all ingredients except vanilla, egg whites, and peanut butter in a large pot and boil. Stirring continuously, until ball forms. (Like when making fudge or candies) the ball should be hard and have a soft crack. Add vanilla. Slowly pour the mixture over the egg whites while mixing with a blender the whole time. Continue to mix until the candy has cooled and resembles the texture of marshmallow cream. Pour onto powdered sugar working surface and roll thin (powder sugar your roller) Spread a thin layer of peanut butter. Roll up and cut. (Cut the pieces using a piece of thread to keep its form and layers).
OLD TIMEY BUTTER ROLL DESSERT
This is an old recipe that my great grandmother used to make. It is very similar to a cobbler but without any fruit.

- Pre heat oven to 350 degrees.
- Place stick of margarine in a 9X13 casserole dish (I prefer metal over glass for this recipe).
- Mix together all of the ingredients for the batter and pour over the melted margarine. DO NOT MIX!
- In a different bowl, mix all the ingredients for the sauce and then pour it over the batter. Again, DO NOT MIX.
- Bake for 35 to 40 minutes. Serve it warm with vanilla ice cream!

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking pan.
- In a large bowl, mix together flour and salt. Cut shortening in thoroughly with a pastry blender until mixture resembles breadcrumbs. Stir in water and press dough together with your hands. Roll out pastry into a large rectangle. Spread the butter evenly over the pastry, then sprinkle on 1/4 cup sugar and nutmeg. Roll up the dough jelly roll style and pinch to seal. Cut into 12 even slices. Place the rolls in the prepared pan.
- In a small saucepan, heat milk, 2/3 cup sugar and vanilla until mixture begins to bubble. Pour milk mixture over rolls.
- Bake in preheated oven until brown, about 30 to 40 minutes.
