BUTTERBALL COOKIES OR AKA WEDDING COOKIES
This is an old standby recipe that I make for any occasion. They are so good and easy to make, You can change the recipe to Lemon butter cookies or Key Lime butter cookies, simply by deleting the vanilla and adding lemon or key lime juice instead, or be creative and come up with something entirely different. Such a versatile recipe,and I love the flavor...Enjoy!

Steps:
- Cream butter; gradually add confectioners sugar and the salt. Beat until light and fluffy. Add nuts and vanilla and blend in the flour, mixing well.
- Shape into balls, using about a teaspoon for each cookie. Place onto an ungreased baking sheet and bake for 15 or 20 minutes. Do Not Brown. Remove from oven and let cool for about 5 minutes. Roll in powdered sugar. After they have completely cooled, roll in sugar again.
- Makes about 80 cookies.
ITALIAN WEDDING COOKIES III
Also sometimes called 'Mexican wedding cookie', 'Russian tea cakes', or 'butterballs', can also be made into crescents. You can also substitute pecans and they are very good as well. This is the best version of these I have ever seen, it was given me by a friend who grew up in central Europe.

- Preheat oven to 325 degrees F (165 degrees C).
- Cream butter or margarine in a bowl, gradually add confectioners' sugar and salt. Beat until light and fluffy. Add almonds and vanilla. Blend in flour gradually and mix well.
- Shape into balls (or crescents) using about 1 teaspoon for each cookie. Place on ungreased cookie sheets, and bake for 15-20 min. Do not brown. Cool slightly, then roll in the extra confectioners' sugar.

WEDDING COOKIES (SNOWBALLS, RUSSIAN TEA CAKES)
POPULAR cookies at parties, weddings or on a cookie tray. They melt in your mouth! Very impressive and addictive! I have been making these cookies for 45 years. These are also the same cookies that our dear "Meme" calls butter balls. Yield is approximate as it depends on how large you form each cookie. I have never known anyone to not like this cookie! I have always used real butter for this recipe.

Steps:
- Blend softened butter with powdered sugar. Add vanilla.
- Mix in salt, baking powder, flour and chopped pecans.
- Form dough into 1 inch balls or flattened cookies and place on an ungreased cookie sheet.
- Bake in a 325 degree oven for 12 minutes, until firm but not brown. While hot roll in powdered sugar. Let cool and roll again in powdered sugar.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a baking sheet.
- Beat together the butter and 3/4 cup confectioners' sugar with an electric mixer in a large bowl until smooth. Add the egg, vanilla extract, and almond extract. Stir together the flour, baking powder, and salt in a bowl and mix into the butter mixture until just incorporated. Shape the dough into 1-inch balls and arrange on the prepared baking sheet spaced about 2 inches apart.
- Bake in the preheated oven until firm, about 10 minutes. Cool on the sheet for 10 minutes before removing to cool completely on a wire rack.
- Spread the 1/4 cup confectioners sugar on a plate; roll the cooled cookies in the confectioners' sugar to coat.
