Steps:

  • Mix gluten-free pancake mix, water, egg, buckwheat flour, and vegetable oil together in a bowl until there are no lumps. Add additional water if needed to thin batter. Let batter sit for 15 minutes for fluffier pancakes.
  • Heat a lightly oiled griddle over medium-low heat. Pour 1/4 cup batter onto the hot griddle and cook until golden brown, about 2 minutes. Flip and cook until opposite side is golden brown, about 1 minute more.

Steps:

  • Whisk together brown rice flour, all-purpose flour, buckwheat flour, sugar, baking powder, and baking soda in a bowl. Combine 3/4 cup buttermilk, egg yolks, and oil in a separate bowl; mix until combined. Add dry ingredients to buttermilk mixture; stir until just combined. Do not overmix batter.
  • Beat egg whites in a glass, metal, or ceramic bowl until soft peaks form. Fold egg whites into the batter. Batter should have the consistency of tomato soup. If it is too thick, add remaining buttermilk little by little, waiting a bit to allow batter to set. (Gluten-free flours need time to absorb the liquid, thickening after about 45 seconds to 1 minute.)
  • Heat a lightly oiled griddle over medium heat. Drop batter by 1/4-cupfuls onto the griddle. Cook until bubbles form and the tops are a bit dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.
  • Serve hot or wait until completely cooled before freezing.

Gluten-Free Buttermilk Pancakes image

Steps:

  • In a large bowl, whisk together flour, potato starch, sugar, baking powder, baking soda, salt, and xantham gum, if using, until well combined. In a small saucepan, gently heat buttermilk over low until warm to the touch. Transfer to a large liquid-measuring cup; whisk in eggs and melted butter. Make a well in center of flour mixture; stir in buttermilk mixture until lumpy and just combined (do not overmix). Let stand 10 minutes.
  • Meanwhile, preheat oven to 200 degrees and place a rimmed baking sheet fitted with a wire rack inside. Heat a large nonstick skillet over medium; lightly brush with oil.
  • Working in batches, add heaping quarter-cups of batter to skillet, spreading lightly with the bottom of the cup. Cook until bubbles form on surface, edges have set, and undersides are golden brown, about 4 minutes. Flip and continue cooking until other sides are golden brown, 2 to 3 minutes more. Transfer to prepared sheet in oven to keep warm while you cook remaining pancakes. Serve with room-temperature butter and a drizzle of maple syrup.

Steps:

  • Combine dry ingredients in large bowl. Whisk remaining ingredients together; stir into dry mixture just until moistened, reserving the eggs. Place batter into a tightly lidded jar for at least 24 hours and up to 48 hours. When you're ready to make these pancakes, mix the beaten egg yolks into the batter, and whip the egg white until they are light peaks, and fold into the batter. Pour batter by small ladles onto a hot nonstick griddle coated with nonstick cooking spray. Flip when bubbles form on top of the pancakes and then cook until second side is golden brown. Buckwheat is a stiffer harder pancake if you were to just mix it up and cook them. They are flatter pancakes, because they have no white flour or gluten in them. The eggs enrich them with protein and the folded egg whites give them a nicer lighter texture. Garnish using vanilla yogurt and blueberries, or you can serve them with butter and maple syrup. These pancakes are excellent with thick sliced bacon or a good slice of smoked ham.

  • Add the egg, 1⅓ cups buttermilk, and 1 teaspoon vanilla. Stir until combined, but don’t overmix! Let the batter stand for 10 minutes.
  • Next, fold in 2 tablespoons melted butter until just combined. Let stand for another 10 minutes. The batter should thicken slightly as the dry ingredients absorb liquid.
  • Heat your griddle or cast iron skillet over medium heat. When butter sizzles, but doesn’t turn brown too fast, you’ll know the heat is correct. Use a portion of the extra 3/4 tablespoon of butter by brushing some of it in the center of the pan surface. Pour ⅓ cup of batter for each pancake (you can also make them larger or smaller as you prefer). Cook until the bottom is browned and bubbles form on the top of each pancake (about 2 to 2½ minutes). Flip the pancake once. Let cook until it springs back when pressed in the center (about 2 minutes). Transfer to a serving plate. Repeat until you’ve used all of the batter.
