BANANA CHIP COOKIES

While looking for a chocolate chip cookie that was a little different, I came up with this version. The result is a cake-like cookie that stands out from the rest. It's a great way to use up those ripe bananas. -JoAnne Wempe, Seneca, Kansas

Banana Chip Cookies image

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in milk, honey and banana. Combine flour, baking powder and salt; gradually add to the creamed mixture and mix well. Stir in chocolate chips. , Drop by heaping teaspoonfuls 2 in. apart onto lightly greased baking sheets. Flatten with a glass dipped in sugar. Bake at 350° for 10-12 minutes or until edges are lightly browned. Remove to wire racks to cool.

These are yummy and quick to make. I buy bananas while on sale, let them ripen, then freeze them in their own skins. when I am ready to use them I just thaw and pop them right out of their skins

Steps:

  • Mix dry ingredients together set aside.
  • Cream sugar and butter, add eggs mixing in well, stir in bananas and flavoring, add dry ingredients and oatmeal fold in nuts and chips (The dough may seem a little sticky and you may be tempted to add more flour, but first try baking off a few. Found that adding more flour made them dry after baking, the oatmeal seems to swell some during the baking process).
  • Drop onto lightly greased baking sheet, bake at 375°F 10-12 minutes.

1/2 teaspoon salt
1 teaspoon cinnamon
3 dashes nutmeg
1 cup sugar
1/2 cup butter

1 cup ripe banana

1/2 cup chopped walnuts
1 (11 ounce) bag butterscotch chips

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl beat the butter or margarine, white sugar and brown sugar together. Add the eggs and vanilla, beating well.
  • Stir together the flour, baking soda, cinnamon and salt. Gradually add the flour mixture to the butter mixture and stir until blended. Stir in the oats and the butterscotch chips. Drop by teaspoonfuls onto an ungreased cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven, until the edges begin to brown.

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy. Beat in bananas, eggs and vanilla.
