Steps:
- Cook and stir marshmallows, peanut butter, and butter in a saucepan over medium heat until the marshmallows melt completely into the mixture, about 5 minutes.
- Put chow mein noodles into a large bowl. Pour marshmallow mixture over the chow mein noodles; stir to coat.
- Spray hands with cooking spray or coat with butter so the noodles will not stick to your hands. Scoop noodle mixture from bowl with an ice cream scoop and form into balls, hollowing the center out to create the nest. Arrange 4 chocolate eggs into each nest.

My aunt introduced me to these fun little snacks. We made them for Easter and it was a perfect treat, not to mention a hit with everyone! The recipe can be tweaked to however you like your nests, and it is all based on personal preference.

Steps:
- 1. Put the butterscotch chips in a glass bowl and melt in the microwave. The amount is completely optional, I used the entire bag.
- 2. Once the chips are melted, stir in the chow mein noodles.
- 3. On a piece of parchment paper, take a small scoop of the chow mein noodle mixture and form a small nest with your hands. Place the eggs on top.
- 4. Do not refrigerate, just leave uncovered on parchment paper to dry.
BUTTERSCOTCH EASTER NESTS
I got this recipe from a childrens cookbook. Original recipe called for peanutbutter chips, but we just love butterscotch. If anybody has peanut allergies you can leave out nuts. The salt or seasalt is a must for these sweet and salty treats.

- 1. Combine oil, salt and butterscoth in microwave bowl. Microwave on 30 min interval til melted.
- 2. Combine nuts and chowmien noodles in bowl. Pour butterscoth over noodle nut mixture and combine. Form into 2inch nests. Spray hand with cooking spray so doesnt stick. Place on waxed paper. Allow to cool for 10 minutes.
- 3. Add eggs to top. Store in container.

- Put the butterscotch and white chocolate chips in a glass bowl and melt in the microwave for about 2 minutes, stirring at 30 second intervals. Stop cooking when it is smooth.
- Once the chips are melted, stir chips until smooth and gently fold in the chow mein noodles.
- On a piece of wax paper, take a small scoop of the chow mein noodle mixture and form a small nest with your hands.
- Place the eggs on top.
- Let set up and serve.

- In a microwave-safe bowl, carefully heat the butterscotch chips until they are melted. (I generally microwave for 30 seconds, then stir. And then continue heating/stirring in 10-20 second intervals until the chips are melted. Be careful that they do not burn!)

- Prepare two sheet pans with parchment paper (to transfer easily to the refrigerator later), or place a sheet parchment paper on your counter top before beginning.
- In a microwave safe bowl, add butterscotch chips and peanut butter. Microwave in 30 second increments, stirring until melted and smooth. Alternatively, melt over a double boiler on the stove top.
- In a separate bowl, combine chow mein noodles and coconut flakes. Add butterscotch mixture and stir until evenly coated.
- Working quickly (your mixture will solidify within about 10 minutes), spoon mixture in heaping mounds on your prepared parchment paper (about 2-3 tablespoons per mound). Form into a round shape and hollow out the center to make space for your eggs. Top each mound with 2 to 3 eggs while butterscotch is still wet.
