PUMPKIN BREAD WITH RAISINS AND PECANS

Orange juice adds a subtle zest to this moist and delicious pumpkin bread. You may choose to substitute dried cranberries or blueberries for the raisins and walnuts or other nuts for the pecans to add variety.

Pumpkin Bread with Raisins and Pecans image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour 2 loaf pans.
  • Sift flour, baking soda, pumpkin pie spice, baking powder, and salt together in a large bowl. Toss raisins and pecans with 1 tablespoon of the flour mixture in a separate bowl.
  • Beat sugar and butter together using an electric mixer in a mixing bowl until fluffy. Add pumpkin puree, orange juice, eggs, and vanilla extract; blend until well combined. Add flour mixture slowly and blend thoroughly. Fold in raisins and pecans.
  • Pour batter evenly between the 2 prepared loaf pans.
  • Bake in the preheated oven until firm and tops spring back lightly when pressed, 30 to 40 minutes. Remove from the oven and cool completely on racks before serving.

Butterscotch Pumpkin Raisin Nut Bread image

Steps:

  • 1. PREHEAT OVEN TO 350 DEGREES F. Plump raisins by adding raisins to a small bowl and cover with water, then microwave for 5 minutes. Set aside then allow water to cool then drain water from raisins and set aside till needed.Spray cake pan with Bakers Joy and set aside till needed.
  • 2. In a large mixing bowl, add the eggs, sugar and beat together till blended. Then add cooking oil & canned pumpkin and continue to beat till thourgly mixed together. Now add salt, baking powder, nutmeg, cloves, cinnamon & all spice in a medium bowl with flour & stir to mix together. Gradually add flour to egg mixture, and beat till mix, then alternately add the milk mixture when batter becomes dry.
  • 3. Combine milk with pumpkin liqueur & add alternately with flour mixture. Beat till blended. Remove beater.
  • 4. Add Chopped nuts and plump raisins to batter and stir with a spatula to combine. Prepare baking pan with Bakers Joy or butter & dust pan with flour, remove excess flour, and pour batter into 2 prepared 9 X 5 Inch Loaf pans.
  • 5. Bake in preheated 350 degree F. oven for 90 minutes or until tooth pick inserted into center of cake comes out clean.
  • 6. Let stand for 10 minutes. Remove from pans and place on wire racks and cool completely. Serve plain or top with your favorite frosting.
  • 7. Cream Cheese Frosting: Cream butter with 8 ounces room temperature cream cheese and 1 pound box Powdered sugar until creamy, add 1 tsp vanilla Extract. Beat at medium speed until light & fluffy. Frost and Garnish Cake if desired. Store in fridge after frosting.

  • 2. With mixer on low,mix together sugar,oil,eggs,one at a time. Add pumpkin.

Steps:

  • Preheat oven to 350 degrees.
  • Mix together: flour, sugar, baking powder, cinnamon, nutmeg, baking soda, ginger, cloves and salt. Stir until combined.
  • Stir in walnuts and raisins. Set aside.
  • Beat the eggs in a medium bowl.

Pumpkin Bread With Brown Butter and Bourbon image

Steps:

  • Heat oven to 350 degrees and arrange a rack in the center. Grease the insides of two 8-inch loaf pans with butter or line with parchment paper.
  • In a large skillet, melt 1/2 cup (1 stick) butter over medium-high heat. Reduce heat to medium and cook until the frothy white milk solids sink to the bottom of the pan and turn a fragrant, nutty brown, 5 to 7 minutes. Brown butter can burn quickly, so watch it carefully. (A tip: You will know your brown butter is almost ready when the frantic sound of bubbling begins to die down, so use your ears as well as your eyes and nose.)
  • In a glass liquid measuring cup, combine bourbon and vanilla. Add water until you reach the 2/3 cup mark. In a large bowl, whisk together bourbon mixture, pumpkin purée, eggs and oil. With a spatula, scrape all the brown butter from the skillet into the pumpkin mixture and stir to combine.
  • In another large bowl, whisk together all-purpose flour, whole wheat flour, brown sugar, baking soda, salt, cinnamon, ginger and cardamom. Pour liquid ingredients into dry ingredients and stir to combine.
  • Divide batter between the two greased loaf pans. Place them on a rimmed baking sheet and transfer to oven. Bake for 50 to 60 minutes or until a tester or toothpick inserted into the center of the loaf comes out clean. Allow bread to cool completely before removing from pan.
