CHOCOLATE-CHERRY DROP COOKIES
Stir dried cherries into chocolate dough with chocolate chunks.

Steps:
- Position racks in the upper and lower thirds of the oven and preheat to 325 degrees F. Line 3 baking sheets with parchment.
- Whisk the flour, cocoa and salt together in a medium bowl. Put the butter, unsweetened and semisweet chocolates in a large microwave-safe bowl. Microwave in 30 second increments, stirring until melted, 3 to 4 minutes.
- Stir the granulated and light brown sugars into the chocolate mixture until blended and then add the milk, vanilla and eggs and beat vigorously with a wooden spoon or spatula until thick and glossy. Add the flour mixture and stir until just combined. Stir in chocolate chunks and dried cherries.
- Drop the batter in heaping tablespoons onto the prepared baking sheets, about 2-inches apart. Bake until the cookies are set on the edges but still soft in the middle, 12 to 15 minutes, rotating the pans halfway through the baking time. Cool on the baking sheets on a wire rack for 5 minutes, then transfer to the wire rack to cool completely.

CHOCOLATE CHERRY COOKIES

Steps:
- Combine flour and cocoa; set aside.
- Beat butter in a med bowl on med speed until softened.
- Add sugar, baking soda, baking powder and salt.
- Beat until well mixed.
- Beat in egg and vanilla, scraping the side of the bowl.
- Gradually beat in flour mixture.
- Shape dough into 1-inch balls.
- Place 2-inches apart on an ungreased cooking sheet.
- Press down the centers with your thumb.
- Drain cherries, reserving juice.
- Place a cherry in the center of each cookie in the depression you made with your thumb.
- Combine chocolate pieces and condensed milk in a small saucepan.
- Cook and stir over low heat until the chocolate is melted.
- Stir in 4 teaspoons of the reserved cherry juice.
- Spoon about 1 teaspoon of the chocolate and milk mixture over each cherry, spreading to cover cherry.
- If the frosting is too thick, thin with additional cherry juice.
- Bake in a 350°F oven for about 10 minutes or until edges of cookie is firm.
- Cool on cookie sheet for 1 minute.
- Transfer to a wire rack to finish cooling.

- In a small bowl soak cranberries in wine for 5-10 minutes.
- In a large bowl, cream sugars and Smart Balance.

- Heat oven to 190C/fan 170C/gas 5. Beat the butter, sugars and egg until smooth, then mix in the flour, chocolates and cherry pieces and ½ tsp salt. Spoon onto non-stick baking sheets in large rough blobs - you'll get 20 out of this mix. Make sure they are well spaced as the cookies grow substantially as they bake. The raw dough can be frozen.
- Bake for 12-14 mins until just golden, but still quite pale and soft in the middle. If baking from frozen, give them a few mins more. Cool on the sheets for 5 mins, then lift onto racks with a fish slice and leave to cool completely.

- Beat the butter, egg yolks and brown sugar until creamy. Add vanilla and beat again. Remove beater and get a spoon to mix the rest of the way. Alternate adding flour, nuts and candied cherries.

- Bake at 350F for 12-13 minutes. These cookies will brown very fast due to the butter content. You should remove them when the bottoms are just starting to turn brown.

- In a small bowl, soak cherries in hot water for at least 10 minutes., Meanwhile, in a large bowl, cream the shortening, butter and sugars until light and fluffy. CABERNET AND CHERRY CHOCOLATE DROP COOKIES

- marinate about 30 minutes. Drain cherries (and drink the wine...). In In a small bowl place the cherries and wine. Microwave 45 seconds and then let sit and another bowl melt the baking bar in a small bowl by microwaving it about 45 seconds and stirring. If chocolate is still lumpy, then microwave again for about 10-15 seconds, then stir. If still lumpy, repeat until smooth. Let chocolate sit to cool to room temperature. In a large bowl cream together the chocolate, oil and sugar. One at a time, beat in the eggs and then add in the vanilla extract. In another bowl mix together the baking powder, flour and the salt. Add the creamed chocolate mixture to the dry ingredients and mix all together. Fold in the drained "cabernet cherries," the chocolate chips and the pecan pieces. Roll the dough into 1" balls and then roll these lightly into powdered sugar to coat all sides. (If dough is too sticky to roll easily, refrigerate it about 30 minutes to an hour.) Place on cookie sheet, spacing cookies 2 inches apart. Bake at 350 degrees for 10 to 12 minutes.
