Furikake-Crusted Ahi Pupu image

Steps:

  • In a mixing bowl, combine all ingredients for the seasoned flour.
  • In a separate mixing bowl, combine dry ingredients for the tempura batter. Beat the egg and cold water together in a separate container. Add egg and water mixture to the dry ingredients and mix.
  • In another mixing bowl, combine the furikake and panko flakes. Line up the 3 bowls in the following order: Seasoned flour, tempura batter, furikake coating. Season the fillets in the seasoned flour. Dip it into the tempura batter and then coat it with the furikake-panko mixture.
  • Heat a deep pot halfway filled with peanut oil to 350 degrees F. Fry the ahi in the oil until brown, turn and fry for an additional minute. Drain and serve while hot.

1 pound fresh ahi (yellowfin tuna), cut into 1 1/2- to 2-ounce fillets

Steps:

  • Place shoyu, brown and white sugars, ginger, sherry, oil, green onions, garlic, white pepper and 3/4 gallon water in a large pot and bring to a rolling boil. Let cool, then strain out the solids so you are left with just teriyaki sauce. Place the ahi in a large bowl and cover with the teriyaki marinade (save remaining marinade for another use). Let marinade, refrigerated, 4 to 6 hours.
  • Preheat a grill for cooking at medium-high heat. Oil tuna and sprinkle with salt and pepper, then grill to desired doneness, 2 1/2 minutes per side for medium-rare.

2 gallons Hawaiian shoyu, such as Aloha
2 pounds brown sugar
2 pounds white sugar

Steps:

  • Heat oil over medium heat in a saucepan. Add garlic, shallots and ginger. Saute for 30 seconds and add crushed tomatoes, sake, sugar and chile sauce. Simmer for 15 minutes. Remove sauce from heat and set aside. When cool, puree in blender until smooth. Reheat to serve.

Paul Prudhomme's Cajun Sauce for Beef image

Steps:

  • Combine onions, bell peppers and celery in a small bowl & set aside while you start the roux.
  • In a heavy 2-quart saucepan (I prefer a castiron skillet), heat the oil over medium-low heat to about 250°. With a metal whisk, whisk in the flour a little at a time until smooth.
  • Continue cooking, whisking constantly, until roux is light brown, about 2 to 3 minutes. be careful not to let the roux scorch or splash on you.
  • Remove from heat and immediately stir in the vegetable mixture (with a spoon) as well as the red, white and black peppers.
  • Return pan to high heat and cook about 2 minutes, stirring constantly (you're cooking the seasonings and vegetables in the light roux and the mixture should be pasty). Remove from heat.
  • In a separate 2-quart saucepan, bring the stock/broth to boil. Add the roux mixture by spoonfuls to the boiling stock, stirring until dissolved between each addition.
  • Bring mixture to a boil, then reduce heat to a simmer & cook until the sauce reduces to 3 1/2 cups (about 15 minutes).
  • Skim any oil from the top and serve immediately.
