PINEAPPLE DATE BRAN MUFFINS

A healthy, fibre-filled muffin - it was designed to use up odds and ends in my kitchen... with delicious results! Makes four jumbo muffins - perfect for a hearty breakfast.

Pineapple Date Bran Muffins image

Steps:

  • Preheat oven to 400 and spray muffin tins.
  • Mix yogurt, Splenda, syrup and egg whites until well combined.
  • Add pineapple, milk and cereal; stir and let sit at least 5 minutes.
  • Mix dry ingredients in aseparate bowl; add to wet.
  • Stir in dates.
  • Spoon batter into tins.
  • Bake for 25-30 minutes, or until toothpick comes out clean. Leave in tins at least 2 or 3 minutes before removing.

1/4 cup plain nonfat yogurt (or, my preference, Apple Crumble Source yogurt!) or 1/4 cup applesauce (or, my preference, Apple Crumble Source yogurt!)
1/2 cup Splenda sugar substitute
1/4 cup sugar-free maple syrup
2 egg whites
2/3-1 cup non-fat soymilk (use enough to form a moist batter)
1/2 cup canned crushed pineapple
1 1/2 cups all-bran cereal
1 cup whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup dates, chopped or 1/4 cup raisins

Simple Bran Muffins image

Steps:

  • Soak bran, milk (I use soymilk) and golden syrup together for 5 minutes.
  • Mix in all other ingredients.
  • Preheat oven, and bake for 20 minutes at 180 degrees Celcius.

BRANDON BRAN MUFFINS

These are really good muffins. Although made and tested every conceivable way, the best and tastiest ones are when the batter is poured into muffin tins, and allowed to rest in the refrigerator for 24 hours. Sure you can bake them right away or even after 12 hours and they're still good, but resting the batter for 24 hours seems to make them rise higher than baking right away. No matter what, they are still much better than any store bought muffin and chock full of healthy ingredients. A beautiful, dense and filling muffin, they are perfect to prepare the evening before a brunch, so they can be served warm the next morning.

Brandon Bran Muffins image

Steps:

  • Beat eggs. Add sugar, molasses, maple syrup, salt, milk, oil, baking powder and baking soda. Mix well.
  • Add flour and bran and blend thoroughly. Stir in raisins and dates.
  • Spoon mixture into greased, sprayed or buttered muffin tins to about 3/4 full.
  • Let mixture rest in tins for an optimal time of 24 hours.
  • Preheat oven to 400 F and bake 15 - 20 minutes.

Steps:

  • Soak all bran in water for a couple of minutes.
  • Add baking powder to cereal and stir.
  • Add brownie mix and stir to combine.
  • Spoon mix into medium sized muffin tins lined with muffin liners or sprayed with nonstick cooking spray. Eacg muffin cup should be 3/4 full.
  • Bake in oven @ 350 for about 20-25 minutes.
