CAN'T EAT JUST ONE COOKIE
Cookies usually involve numerous ingredients and are very time consuming and for those of us who are not up to par as far as baking goes, this recipe is made with only three ingredients and there is no actual baking involved. Great recipe for those holiday parties.

Steps:
- 1. Spread peanut butter on one ritz and top with second cracker.
- 2. Melt white chocolate and dip the peanut butter cracker sandwiches into the white chocolate and place on wax paper till chocolate rehardens
- 3. Can even melt some mil chocolate and drizzle across dipped cookies to dress them up.
- 4. Arrange on a decorative plat or a lined tin.

These tender, melt in your mouth biscuits are so addictive, bet you can't eat just one. I've been making these for years and depending what I'm serving them with, I sometimes mix a butter and garlic salt mixture and brush the tops a few minutes before finished....so darn good! Enjoy!

Steps:
- 1. In a large bowl, whisk together the flour, salt, thyme, baking powder and soda. Using a pastry blender, cut in the butter until the mixture resembles cornmeal.
- 2. Preheat oven to 450 degree F. Add to this the milk and cheese and stir with a spoon for 25 - 30 seconds.
- 3. Drop 1 1/2 inch apart but heaping tablespoonfuls on an ungreased baking sheet. Sprinkle with remaining cheese and bake for 12 - 13 minutes or until golden.
- 4. Melt in your mouth good! Best served straight from the oven.

- In a large mixing bowl, beat butter and oil with an electric mixer on medium to high speed for 30 seconds. Add 1/2 cup granulated sugar, powdered sugar, baking soda, cream of tartar and salt. Beat until combined, scraping sides of bowl occasionally. Beat in egg and vanilla until combined. Beat in the flour. Cover and chill 4 to 24 hours or until easy to handle.
- Shape dough into 1/2-inch balls for small cookies or 1-1/4-inch balls for larger cookies. Place small balls 1-1/2 inches apart on ungreased cookie sheets or large balls 2 inches apart. Flatten balls with the bottom of a glass dipped in granulated or colored sugar. Or, sprinkle flattened cookies with edible glitter, if you like.
- Bake in a 375 degree F oven for 8 to 10 minutes for small or 10 to 12 minutes for large cookies or until bottoms are lightly browned. Transfer cookies to wire racks and let cool. Makes 72 small cookies or 36 large cookies.
