CAPIROTADA (MY MOM'S VERSION)

There are many, many versions of this dish. In fact, every family had their own twist. This is the one that I grew up with. It was a tradition to eat this during lent every year. It's still one of my favorites.

Capirotada (my mom's version) image

Steps:

  • Cut bread into cubes and set aside in a large bowl.
  • If desired, Soak raisins in water and set aside. This keeps raisins from hardening during baking process.
  • Place 4 1/2 cups of water in a medium pot. Add cinnamon sticks in the water. You can use a diffuser for the anise and cloves or place directly into the water. Boil to make a spice tea over medium heat.
  • Place milk and vanilla in a small pot and simmer over very low heat.
  • When spice tea is nice and dark, strain it, pour into a medium bowl and add brown sugar. Stir until sugar dissolves. Pour sweetened tea over bread cubes and mix gently until bread is completely soaked.
  • Pour melted butter into a 9 x 11 baking dish. Glass dish works best. Layer half of soaked bread, half of drained raisins, half ofpecan halves and half of cheese. Gently press down on e Rey thing and you later it with a rubber spatula. Repeat.
  • Pour warm milk/vanilla mixture all over top of the bread mixture. Lightly cover with aluminum foil. Bake at 400 degrees for about an hour or until set. Remove foil for the last 10 minutes to brown the top.

  • Combine first 3 ingredients in a medium saucepan; bring to a boil. Reduce heat; simmer 10 minutes. Discard cinnamon sticks.
  • Combine bread, raisins, almonds, and butter in a large bowl. Drizzle with warm sugar syrup, tossing gently to coat. Spoon mixture into an 8-inch square baking dish coated with cooking spray. Top with cheese. Cover with foil; chill 30 minutes or up to 4 hours.
  • Bake at 350° for 20 minutes. Uncover and bake an additional 15 minutes or until cheese is golden brown. Serve warm.

  • Cut rolls in ½ inch slices and butter both sides, layer on a baking sheet and bake for 3 minutes on each side, until lightly toasted and dry. Remove and cool.
  • Combine water, piloncillo, cinnamon sticks, and cloves in a large saucepan. Bring to a boil; reduce heat, creating a syrup. Simmer syrup uncovered for 20 minutes. Remove from heat and let steep, covered for 2 hours. Pour through a strainer and discard cinnamon sticks and cloves. Set syrup aside.
  • Spray 8 x 10 ½” baking dish with non-stick spray, layer ingredients in the following order: a third of the toasted bread, third of the raisins, third of the cheese, and 1 1/2 cups syrup evenly over cheese. Wait 15 minutes and layer another third of the bread, raisins, cheese, and 1 1/2 cups syrup evenly over cheese. Let soak for another 15 minutes, and again top with the remaining bread, raisins, cheese, and syrup evenly over bread. Before baking let set for another 15 minutes.
