GINGER-SCALLION RAMEN NOODLES

The noodles are just a vessel for this savory, gingery, simple weeknight sauce. Double the batch, and you'll always have a way to brighten up any main dish

Ginger-Scallion Ramen Noodles image

Steps:

  • Toss ginger, garlic, and two-thirds of the scallions in a large bowl to combine. Heat grapeseed oil in a small saucepan over high until hot and shimmering but not smoking, about 2 minutes. Immediately pour hot oil over aromatics. The scallions will sizzle, turn bright green, and wilt almost immediately. Let sit 5 minutes.
  • Mix soy sauce, vinegar, sesame oil, pepper, sugar, and remaining scallions into oil mixture; season with salt. Let sit 15 minutes for flavors to meld. Taste sauce and season with more salt if needed.
  • Meanwhile, cook noodles according to package directions; drain.
  • Toss noodles in a large bowl with as much or little sauce as you'd like. Divide among bowls and sprinkle with sesame seeds. Serve with chili oil alongside.

1 (5") piece ginger, peeled, finely chopped (about 1/3 cup)
4 garlic cloves, finely chopped
1 large bunch scallions, very thinly sliced, divided
1/2 cup grapeseed or other neutral oil
2 Tbsp. low-sodium soy sauce
1 Tbsp. unseasoned rice vinegar
1 tsp. toasted sesame oil
1 tsp. freshly ground black pepper
1/2 tsp. sugar
Kosher salt
4 (5-oz.) packages wavy ramen noodles, preferably fresh
Toasted sesame seeds and chili oil (for serving)

Grilled Chicken Thighs with Ginger-Scallion Noodles image

Steps:

  • Preheat a grill to medium high. Combine 2 tablespoons oyster sauce, 1 tablespoon vegetable oil, the five-spice powder, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Add the chicken and toss to coat.
  • Oil the grill grates. Grill the chicken until lightly charred and cooked through, 5 to 6 minutes per side. Transfer to a cutting board and let rest.
  • Meanwhile, bring a medium saucepan of salted water to a boil. Add the noodles and cook as the label directs, adding the carrots and snow peas during the last minute of cooking. Drain the noodles and vegetables and transfer to a large bowl. Wipe out the saucepan and reserve. Snip the noodles into shorter pieces with kitchen shears.
  • Finely chop the scallions and ginger in a food processor. Heat the remaining 5 tablespoons vegetable oil in the reserved saucepan over medium-high heat. Add the scallion-ginger mixture and cook, stirring, until softened, about 2 minutes. Remove from the heat and stir in the soy sauce and vinegar. Add to the noodle mixture, season with salt and pepper and toss. Divide among plates; drizzle with the remaining 3 tablespoons oyster sauce.
  • Slice the chicken and serve over the noodles.

Steps:

  • 1. For the broth Add oil to a large pot. Add the ginger, garlic and scallions and cook for 1 minutes. Add the chicken stock and bring to a boil. Reduce to simmer and simmer for 15 minutes.
  • 2. Cook the noodles according to package directions and drain. Cook the Shiitake mushrooms in a little oil until they give off their moisture
  • 3. Place the noodles in a bowl. Add the mushrooms, carrots, snow peas, cucumbers, and pickled mustard greens.
  • 4. Ladle the hot broth over top of the veggies and noodle. Let sit a couple of minutes. Then top with the cilantro, and nuts. Drizzle the hoisin sauce on top and serve with a lime wedge

Steps:

  • Combine scallions, ginger, sesame oil, soy sauce, and rice wine vinegar in a bowl. Stir until combined and refrigerate for 10 minutes.

  • To prep the broth: Heat a saucepan over medium-low heat and add the coconut oil. Add in the ginger, garlic and scallions and cook for 1 minute. You can add a pinch of salt and pepper here if you feel that your stock is not super salty. Pour the stock in the pot. Bring the mixture to a boil, then reduce it to low heat and cover. Let it simmer for 15 to 20 minutes while you prep the rest of the ingredients
  • To prep the rice noodles: I take a large bowl and put the dry noodles in the bowl. I cover the noodles with very hot water (not boiling, but as hot as my tap will allow!) by at least 2 inches, then I cover the bowl with a towel. After 15 to 20 minutes, the noodles should be tender.
  • If you’d like to cook the shiitakes: I heat a large skillet over medium-low heat and add a teaspoon of coconut oil. Add the mushrooms and stir. Cook until they are soft and juicy, stirring occasionally, about 6 to 8 minutes. Season with a sprinkle of salt and pepper.
  • To make the bowls: add a serving of rice noodles to a bowl, then top with a few mushrooms, red peppers, carrots, snow peas and cucumber slices. Ladle 1 cup (or so!) of broth over top. Add on your toppings of choice. I love fresh cilantro, toasted sesame oil and chopped peanuts!
