CAPRESE MACARONI SALAD

When fresh tomatoes and basil are abundant in the summer, I like to make this wonderful Caprese macaroni salad. -Debbie Glasscock, Conway, Arkansas

Caprese Macaroni Salad image

Steps:

  • Cook macaroni according to package directions; drain and rinse with cold water. Cool completely., For dressing, in a small bowl, combine mayonnaise, dressing mix, sugar, mustard, salt and pepper. In a large bowl, combine tomatoes, mozzarella and macaroni. Add dressing; gently toss to coat. Refrigerate until serving. Top with basil and Parmesan before serving.

2 cups uncooked elbow macaroni
1 cup mayonnaise
1 tablespoon Italian salad dressing mix
2 teaspoons sugar
3/4 teaspoon ground mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1 pint cherry tomatoes, halved
1 cup fresh mozzarella cheese pearls
1/4 cup fresh basil leaves, slivered
2 tablespoons grated Parmesan cheese

Caprese Mac & Cheese image

Steps:

  • In a large bowl, combine oil, vinegar, garlic, basil, salt, red pepper and black pepper; add tomatoes and mozzarella and toss until well coated; let mixture marinate at room temperature at least 30 minutes.
  • Cook pasta per package directions; drain; place in a large bowl and add the tomato mixture; toss until well combined, allowing the cheese to melt slightly.
  • Serve warm.

3/4 cup olive oil
1/4 cup balsamic vinegar
4 garlic cloves, minced
1/4 cup fresh basil, chopped
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
1 lb ripe plum tomato, chopped
1/2 lb fresh mozzarella cheese, torn into 1/2 inch chunks
2 (7 1/4 ounce) boxes of your favorite mac and cheese

  • Heat a small saucepan over medium heat. Add ­remaining 2 teaspoons oil to pan; swirl. Add garlic; cook 1 minute, stirring frequently. Stir in flour. Add milk, salt, and black pepper, stirring with a whisk. Bring to a simmer; cook 1 minute or until thickened, stirring frequently. Remove pan from heat; stir in cheeses. Add cheese mixture to pasta; toss. Stir in tomato mixture and torn basil. Spoon pasta mixture into 4 (6-ounce) gratin dishes coated with cooking spray. Sprinkle panko and red pepper over pasta mixture. Broil 2 minutes or until panko is browned. Garnish with basil leaves, if desired.
