CARAMEL APPLES

A deep, rich caramel makes for a classic shiny caramel apple.

Steps:

  • Add the sugar, corn syrup and 1/2 cup water to a small saucepan over medium-high heat. Stir a few times before the sugar begins to boil to combine the ingredients. Attach a candy thermometer to the inside of the pan and bring the syrup to a boil. Cook until the syrup begins to turn an amber color, then swirl the syrup to even out the color. Continue to cook until the syrup is a deep amber and the thermometer reads between 375 and 380 degrees F, then remove from the heat. Carefully pour in the cream and gently whisk to combine. Stir in the butter, vanilla and a pinch of salt until smooth. Keep off the heat but keep the thermometer attached to the pan.
  • Pierce the apples through the stem ends about halfway through with candy apple sticks. Line a baking sheet with parchment and lightly spray with nonstick cooking spray.
  • When the temperature of the caramel reads around 190 degrees F, dip an apple, using the stick as a handle and swirling to coat completely. Allow excess caramel to drip off the bottom and use a spatula to help remove any large amount of caramel, as it will pool around the apple when you set it down to cool on the lined baking sheet. Repeat with the remaining apples, gently heating the caramel on the stovetop over low heat, stirring, if it gets too thick for dipping. Allow the caramel to set and cool completely before serving or wrapping apples, about 1 hour. (See Cook's Note.)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square pan.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain.
  • Beat cream cheese and brown sugar together in a bowl using an electric mixer until smooth and creamy; beat in cottage cheese, egg, egg whites, vanilla extract, cinnamon, and nutmeg until well combined. Fold noodles and apples into cheese mixture by hand; spread into the prepared pan.
  • Bake in the preheated oven until kugel is lightly browned and firm, 45 to 50 minutes.

Steps:

  • 1. Heat oven to 350^. Cook noodles according to package directions. Drain. Spray a 9x13 inch baking pan. Set aside.
  • 2. Combine the next 3 ingredients in a medium saucepan.Cook over low heat, stirring occasionally, until smooth , about 6 minutes. Remove from heat.
  • 3. Combine the next 7 ingredients in a large bowl; mix well. Add eggs, mix well. Add cream cheese mixture, mix well. Stir in noodles.Spoon into prepared pan.
  • 4. Topping: Combine apples, sugar and cinnamon in a medium bowl. Spoon apple mixture over noodle mixture, gently pat apples into noodles.
  • 5. Combine corn flakes, melted butter and brown sugar in a small bowl; sprinkle over apples. Bake for one hour or until knife inserted in center comes out clean. To serve, cut into desired pieces, serve warm -drizzled with caramel apple dip.

12 oz pkg. uncooked egg noodles
1 c milk
1/4 c butter
2 pkg 8 oz each cream cheese, cubed
1/2 c granulated sugar
1 Tbsp vegetable oil
1 tsp freshly grated each of lemon and orange zests
2 tsp lemon juice, fresh
1/2 tsp ground nutmeg
4 large eggs
TOPPING:
5 c tart green cooking apples, cored, peeled, chopped
3 Tbsp granulated sugar
1 tsp ground cinnamon
1 c crushed corn flakes
1/4 c butter, melted
3 Tbsp firmly packed brown sugar
1 c caramel apple dip or your favorite sauce,topping or syrup

NOODLE AND APPLE KUGEL

This comforting kugel tastes much richer than it is, and it is certainly lighter than a traditional kugel (though it is not a low-calorie dessert). I've made this with Golden Delicious apples and with tarter varieties like Pink Lady; I liked it both ways.

Steps:

  • Preheat the oven to 350 degrees. Butter a 2-quart baking dish. Begin heating a large pot of water.
  • Melt 1 tablespoon of the butter over medium-high heat in a large, heavy skillet and add the apples. Cook, stirring or tossing in the pan, until they begin to color and are slightly tender, about 5 minutes. Remove from the heat.
  • When the water comes to a boil, add salt to taste and the noodles. Cook al dente, a little firmer than you would want them if you were eating them right away. Drain through a colander and add to the pan with the apples (if using long flat noodles, cut them first with a scissors into shorter lengths). Add the remaining tablespoon of butter and toss together until the butter melts. Stir in the optional raisins. Set aside.
  • Beat the eggs in a large bowl. Add the sugar and beat together until the mixture is thick. Beat in the yogurt, vanilla, rum, nutmeg and about 1/4 teaspoon salt, or to taste. Add the noodles and apples and fold everything together. Scrape into the prepared baking dish. Push the pasta down into the egg and yogurt mixture (it will not be completely submerged, but try to cover as much as you can). Place in the oven and bake 40 to 45 minutes, until the kugel is set and the sides are browned. There will always be some noodles on top that brown and become quite hard. You can remove these from the baked dish if you wish. Allow to sit for at least 10 minutes before serving. Serve hot, warm or at room temperature.
