Steps:
- 1. First pre-heat the oven to 375F. Then in a meduim bowl combine the first 5 ingredients until soft dough forms. Then shape into 1 1/2 inch ball size. Place then on an ungreased cookei sheet about 2 inches apart. Then using your thumb or the handle of a wooden spoon make an indentation in the center of each cookie.
- 2. Next bake for about 8 to 10 mins or until the edges are a light golden brown. Let cool about 1 min then place on a cooling rack to cool completely.
- 3. Next in a small microwaveable bowl. Place the caramel and half & half then microwave uncovered on high for about 1 to 2 mins. Make sure to stir once until caramel is fully melted. The spoon 1 Tsp. caramel into the indentation of each cookie. Then le cool for about 15 mins.
- 4. Then drizzle with the melted dark & white chocolate chips. Sprinkle with the salt & let stand for about 15 min or until the chocolate has set.
PECAN SANDIE CARAMEL TART

- Make the crust: Preheat the oven to 350˚. Lightly butter the bottom and sides of a 9-inch fluted tart pan with a removable bottom. Spread the pecans on a baking sheet and toast in the oven, stirring once, 10 minutes; let cool. Set aside 1 cup perfect pecan halves for topping.
- Transfer the remaining 1 cup pecans to a food processor with the flour, confectioners' sugar and salt; process until the nuts are finely ground. Add the butter and egg yolk and pulse until the dough is moistened and starts to clump together. Press the dough into the bottom and up the sides of the prepared pan. Freeze until firm, about 20 minutes.
- Line the crust with parchment paper or foil and fill with pie weights or dried beans. Bake until firm and dry around the edges, about 25 minutes. Remove the parchment and weights and continue baking until the crust is lightly browned all over, about 15 more minutes. Transfer to a rack to cool completely.
- Meanwhile, make the filling: Combine the granulated sugar, golden syrup and water in a medium saucepan over medium-high heat; stir until dissolved. Cook, swirling the pan occasionally, until the mixture turns a deep amber color, thickens slightly and registers 300˚ on a candy thermometer, about 8 minutes. Remove from the heat and stir in the diced butter, 1 piece at a time, until smooth and thickened. Stir in the heavy cream, vanilla and salt. Let cool slightly, stirring occasionally, about 30 minutes.
- Pour the filling into the cooled crust and arrange the reserved pecans on top. Refrigerate until cold and set, at least 3 hours or overnight.
SANDIES
Steps:
- In a medium bowl, cream together the butter and sugar until smooth. Beat in the water and vanilla. Stir in the flour and pecans until well blended. Cover dough and chill for at least four hours.
- Preheat oven to 325 degrees F (165 degrees C). Shape dough into walnut sized balls or crescents. Place 2 inches apart onto unprepared cookie sheets.
- Bake for 18 to 20 minutes in the preheated oven, until golden. Roll in confectioners' sugar while still warm.

CARAMEL FILLED CHOCOLATE COOKIES
Chocolate cookie dough is wrapped around caramel filled chocolate candies. We have these at Christmas time each year. They are delicious! Hope you enjoy them too.

- Beat butter until creamy. Gradually beat in white sugar and brown sugar. Beat in eggs and vanilla. Combine flour, baking soda, and cocoa. Gradually add to butter mixture, beating well. Stir in 1/2 cup walnuts. Cover and chill at least 2 hours.
- Preheat oven to 375 degrees F (190 degrees C).
- Combine remaining 1/2 cup nuts with the 1 tablespoon sugar. Divide the dough into 4 parts. Work with one part at a time, leaving the remainder in the refrigerator until needed. Divide each part into 12 pieces. Quickly press each piece of dough around a chocolate covered caramel. Roll into a ball. Dip the tops into the sugar mixture. Place sugar side up, 2 inches apart on greased baking sheets.
- Bake for 8 minutes in the preheated oven. Let cool for 3 to 4 minutes on the baking sheets before removing to wire racks to cool completely.

RASPBERRY CARAMEL PECAN SANDIES

- 1. In a large bowl, cream butter and powdered sugar until light and fluffy. Beat in vanilla. combine flour and pecans; gradually add to creamed mixture and mix well.
- 2. Roll into 1" balls, place 1" apart on ungreased cookie sheets. Using your thumb or end of wooden spoon, press a hole into center of each cookie...as large as you dare with out wrecking the cookie.
- 3. Bake at 325 for 17-20 minutes or until starts to brown slightly. Remove cookies to cooling racks, then roll in powder sugar while still warm, place back on racks to cook completely.
- 4. Filling: In a small saucepan, mix together brown sugar, cream and raspberry sauce. Bring to a full boil. Remove from heat and whisk in powdered sugar. Then spoon or pipe caramel into the center of each cookie. Allow caramel to set, then store in air tight container.
PECAN SANDIES
Very good melt in your mouth cookies. Makes a bunch.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, cream together the margarine, vegetable oil, 1 cup white sugar and confectioners' sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, cream of tartar and salt; stir into the creamed mixture. Mix in the pecans. Roll dough into 1 inch balls and roll each ball in remaining white sugar. Place the cookies 2 inches apart onto ungreased cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven, or until the edges are golden. Remove from cookie sheets to cool on wire racks.

CARAMEL TASSIES
Buttery cookie cups with a smooth caramel filling make a nice addition to a Christmas dessert tray. These are one of my family's favorites.

- In a large bowl, cream butter and cream cheese until light and fluffy. Gradually add flour and mix well. Cover and refrigerate for 1 hour or until easy to handle. , Roll dough into 1-in. balls; press onto the bottom and up the sides of ungreased miniature muffin cups. Prick bottoms with a fork. Bake at 375° for 15-17 minutes or until golden brown. Cool for 5 minutes before removing from pans to wire racks., In a large heavy saucepan over low heat, melt caramels with milk. Remove from the heat; cool slightly. Transfer to a heavy-duty resealable plastic bag; cut a small hole in a corner of the bag. Pipe filling into pastry cups. Cool to room temperature., For frosting, in a small bowl, beat shortening and butter until smooth. Gradually beat in confectioners' sugar and milk until fluffy. Pipe onto filling. Store in the refrigerator.

CARAMEL FILLED CHOCOLATE COOKIES
After making these for my daughter's slumber party last year, I got three phone requests for the recipe the next day.

Steps:
- Beat butter until creamy.
- Gradually beat in white sugar and brown sugar.
- Beat in eggs and vanilla.
- Combine flour, baking soda, salt and cocoa.
- Gradually add to butter mixture, beating well.
- Cover and chill at least 2 hours.
- Divide dough into 48 pieces.
- Start by dividing dough into four equal pieces; then divide each piece into thirds; then each of those pieces in half to make 24; and each of those in half again to make 48 pieces.
- Flatten each piece slightly and return to refrigerator.
- Working with a few at a time, and leaving the remainder in the frige, press a piece of dough around a rollo, being careful to cover it completely.
- (I find the rollos easier to handle when they're pre-chilled) Roll into a ball.
- Place 2-inches apart on a greased cookie sheet.
- Bake for 8 minutes in preheated 375°.
- Let cool for 3-4 minutes before removing from baking sheet or caramel will run out the bottom of cookie.
