Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a jelly roll pan with aluminum foil.
- Melt butter and margarine together in a saucepan; stir brown sugar into butter mixture until dissolved; bring to a boil, reduce heat to medium, and cook at a boil until caramelized, about 2 minutes.
- Spread graham crackers in a single layer onto prepared aluminum foil. Pour butter mixture over graham crackers. Sprinkle pecans over the crackers.
- Bake in preheated oven until topping begins to solidify, about 12 minutes. Let crackers cool before breaking into pieces to serve.

Steps:
- Preheat oven to 350°F (180°C).
- In a bowl, mix the crust ingredients.
- Press into the bottom of a greased 8-inch (20 cm) springform pan.
- Bake for 5 minutes.
- In another bowl, mix all the filling ingredients except the apples.
- In another bowl, mix all the topping ingredients except the caramel.
- Spread the filling over the graham cracker crust, then layer the apple slices on top.
- Sprinkle the topping mix evenly over the apple layer. .
- Bake for 30 minutes
- Drizzle on caramel sauce.

- Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine graham cracker crumbs, ground pecans, sugar, cinnamon, apple pie spice and nutmeg. Pour in the melted butter. Mix well and press into the bottom of a 9 inch springform pan.
- In a large bowl, Beat cream cheese, 1/2 cup sugar and vanilla until smooth. Beat in the eggs one at a time. Pour filling into crust.
- Bake in the preheated oven for 70 minutes, or until filling is set. Allow to cool.

- Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan., In a small bowl, combine the cracker crumbs, 1/4 cup sugar and butter. Press onto the bottom and 1 in. up the sides of prepared pan. Place on a baking sheet. Bake at 350° for 10 minutes or until lightly browned. Cool on a wire rack., In a heavy saucepan over medium-low heat, cook and stir caramels and milk until melted and smooth. Pour 1 cup over crust; sprinkle with 1/4 cup pecans. Set remaining caramel mixture aside. , In a large bowl, beat the cream cheese, 1 tablespoon flour and remaining sugar until smooth. - Combine graham cracker crumbs and butter, stirring well.
- Press mixture evenly onto bottom and 1 inch up sides of a 9-inch springform pan.
- Unwrap caramels; combine with milk and heat over low heat until caramels are melted, stirring often.
- Pour over graham cracker crust; sprinkle chopped pecans evenly over caramel layer and set aside.
- Beat cream cheese at high speed until light and fluffy; gradually add sugar, mixing well.
- Add eggs, one at a time, mixing well after each one. Stir in vanilla and chocolate; beat until blended.
- Spoon over pecan layer.
- Bake at 350 degrees for 30 minutes.
- Remove from oven, and run knife around edge of pan to release sides.

- Preheat oven to 350 degrees F.
- In a large mixing bowl, combine graham cracker crumbs, sugar and melted butter.
- Press into the bottom of a 9 x 13 inch baking dish sprayed with nonstick cooking spray; set aside.
- In another mixing bowl, beat together cream cheese, sugar and vanilla until smooth.
- Beat in eggs, one at a time.
- Add sour cream and mix again until smooth.
- Pour cream cheese mixture over prepared crust, smooth top and bake for 50 minutes.
- Turn off the oven, open the door and let the cheesecake sit in the warm oven for 15 minutes.
- Remove from the oven, and let cool for an hour.
- Combine brown sugar and butter in a saucepan over medium heat.
- Stir continuously until the butter is melted and sugar is dissolved.
- Whisk in condensed milk, corn syrup and vanilla and bring to a boil, stirring continuously.
- Place a candy thermometer in the caramel mixture and continue to boil until the caramel reaches 225 degrees F (or reaches soft ball stage if you don't have a thermometer. That means that when you drop a bit of it into cold water to cool it down, it will form a soft ball.).
- Let caramel cool in the pan for 3-5 minutes, then pour over cheesecake.
- Smooth and let set until cool.
- Cut into squares and serve.
