Carolina's Surprise image

Steps:

  • In the bowl of an electric mixer fitted with a whisk, combine sugar and heavy cream. Add ricotta gradually, whisking until thick and slightly firm. Add orange zest, and whisk until just blended.
  • In a large bowl, mix together strawberries, raspberries and blackberies. Place half of ricotta mixture in the bottom of a large serving bowl. Top with half of berry mixture and a sprinkling of chocolate shavings. Add remaining ricotta mixture, and top with remaining fruit and more chocolate shavings.
  • Cover lightly with plastic wrap, and refrigerate until chilled, about 1 hour.

Zia Carolina's Pasta: Aunt Carolina's Pasta image

Steps:

  • Cook the pasta in a pot of boiling salted water. Stir immediately to prevent the strands from sticking together.
  • In a large saucepan, heat up the olive oil and fry the zucchini until golden brown . Place the fried zucchini on an absorbent paper towel to drain the excess oil. Add the salt to the zucchini while they are still hot and set aside the saucepan with the zucchini-flavored oil for later.
  • Drain the pasta just before it is 'al dente' and add it to the saucepan with the zucchini-flavored oil. Add the fried zucchini, chopped capers and 3/4 of the chopped mint. Mix well so that the flavors are evenly distributed. Add more salt, if necessary. Transfer the spaghetti mixture to a large serving bowl, top with a few whole capers and sprinkle with the remaining mint. Serve immediately.

1 pound/450 g spaghetti
Extra-virgin olive oil, for frying
4 zucchini, sliced
Salt
2 tablespoons/28 g chopped capers, plus extra whole capers for topping
Small bunch fresh mint leaves, finely chopped

Steps:

  • Mix first three ingredients.
  • Spread into a pie plate or onto a pizza pan.
  • Spread the cocktail sauce on next.
  • Top with green onions, shrimp, tomatoes, green peppers and cheese.
  • Cover and chill for at least 2 hours. Serve with crackers and chips -- Make lots it disappears fast!

1 (8 ounce) package cream cheese
1/2 cup sour cream
1/4 cup Miracle Whip or 1/4 cup mayonnaise
2 cups baby shrimp
1 cup extra hot seafood sauce
1 chopped green pepper
2 cups shredded cheddar cheese
3 chopped green onions
1 -2 tomatoes, diced

CAROLINA SUNRISE SAUCE

My inspiration for this sauce was based on a Carolina BBQ sauce, and I found that it works very well with lightly flavored white fish. Feel free to adjust the recipe porportions to meet your own preferences. Cooking is a Creative Sport.

  • Melt the butter with the olive oil in a small sauce pan, saute the onions until they are translucent.
  • Add the remaining ingredients, and stir until the sauce thickens.
  • Serve warm over fish or chicken.

  • Combine all ingredients except potato chips, cheese and almonds and place in a casserole. Top with potato chips and cheese and sprinkle with almonds. Bake at 350 degrees for 20 - 30 minutes.
