This is as close as I have found to the apple pancake at the Original Pancake House. A fluffy, sweet pancake. Excellent with a scoop of vanilla ice cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Melt butter in an oven-safe skillet over medium heat; cook and stir apple slices, about 1/4 cup sugar, and cinnamon in butter until apples are tender, about 5 minutes.
  • Beat eggs, milk, flour, remaining 1/4 cup sugar, baking powder, vanilla extract, and salt in a large bowl until batter is smooth; pour batter evenly over apples.
  • Bake in the preheated oven until golden brown, about 10 minutes. Run a spatula around the edges of the pancake to loosen. Invert skillet over a large plate to serve.

Cinnamon Apple Pancakes image

Steps:

  • In a large mixing bowl, combine the butter, egg, milk and apple.
  • In a separate bowl, sift together the flour, baking powder, cinnamon and sugar. Stir the flour mixture into apple mixture, just until combined (overmixing makes the batter tough!)
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  • Brown on both sides and serve hot with cinnamon syrup if you have it!

German Apple Pancakes image

Steps:

  • Preheat oven to 200°F.
  • Stir together 1/4 cup sugar and cinnamon and set aside.
  • Whisk together flour, salt, and remaining 2 teaspoons sugar in a large bowl. Add milk in a slow stream, whisking, then add eggs, 1 at a time, whisking well after each addition.
  • Peel apples, then cut into 1/8-inch thick slices with slicer, rotating around core (discard core). Cut apple slices into 1/8-inch-thick matchsticks and toss with lemon juice in a bowl. Fold apples and juice into batter.
  • Heat 1 piece butter (1/2 tablespoon) in a 6-inch nonstick skillet over moderate heat until foam subsides, then add 1/3 cup batter, spreading evenly to cover bottom. Cook, reducing heat if browning too quickly and turning pancake over once with a thin flexible heatproof spatula, until golden on both sides, about 4 minutes total. Slide pancake onto a platter and keep warm in oven. Make more pancakes with remaining butter and batter in same manner. Sprinkle with cinnamon sugar and serve immediately.
  • Cooks' note:.
  • Batter, with apples, can be made 3 hours ahead and kept chilled, covered. Stir before using.

Caramel Apple Pancakes image

Steps:

  • For caramel apples, melt butter in large skillet. Add brown sugar and cinnamon; cook and stir until sugar is melted.
  • Add apples, stirring to coat with sugar mixture.
  • Cook over medium heat 5 to 7 minutes or until apples are tender, stirring frequently. Keep warm over low heat.
  • For pancakes, combine pancake mix and cinnamon in medium bowl.
  • Combine milk, egg and melted butter in small bowl with wire whisk; add to dry mixture.
  • Stir with wire whisk until large lumps disappear. Let stand 1 to 2 minutes to thicken.
  • For each pancake, pour scant 1/4 cup batter onto hot griddle.
  • Turn when pancakes bubble and bottoms are golden brown.
  • Serve topped with apple mixture and Syrup.

Found this online while searching for TOPH recipes. Fabulous recipe from The Original Pancake House! The Apple Pancake contains eggs, flour, milk, sugar, cinnamon, vanilla, butter and lots of apples. It takes about 30 minutes to bake in an iron skillet and is served all puffed up and steaming hot. The Apple Pancake really isn't much like a pancake at all. It's more a like a soufflé or really, really moist bread pudding. The only way to truly appreciate it is to try one yourself.

The Original Pancake House Apple Pancake image

Steps:

  • In a mixing bowl, add flour, milk, vanilla and eggs. Mix well.
  • In another bowl, mix the brown sugar, granulated sugar, and remaining cinnamon.
  • Add butter to a 10 inch Pyrex pie deep dish and put in the oven (deep dish Pyrex is great) At 400 degrees.
  • When the butter is completely melted remove from oven.
  • Pour the batter into the Pyrex dish and put back in the oven for 20-25 minutes. The edges will begin to puff.
  • Remove the half-way cooked batter from the oven and now add the apple mixture to it.
  • Just simply place the apples all over the top of the batter.
  • Next, cover the entire surface with the brown sugar/sugar/cinnamon blend and put it back in the oven for another 20-25 minutes.

Steps:

  • Beat the egg yolks until thick and pale in color.
  • In a small bowl, combine the matzo meal with the water or milk.
  • Stir into the beaten yolks.
  • Beat the egg whites with the salt until stiff.
  • Fold into the yolk mixture.
  • Gently stir in the apple.
  • Heat 1/4- inch of oil or butter in a heavy skillet.
  • Drop the batter by tablespoonful into the hot oil; flatten lightly with the back of the spoon.

  • Combine diced apples and water in a microwave-safe dish for the sauce. Cover and microwave on high power for 3 minutes. Stir, replace cover, and microwave on high until apples are fork-tender, about 2 more minutes. Drain and set aside.
  • Combine brown sugar, cream, butter, and salt in a 2-quart saucepan over medium-low heat. Bring to a boil and cook, stirring occasionally, for 5 to 7 minutes. Mixture should be bubbly all over the surface. Mix in vanilla extract and cook, stirring, for an additional 2 minutes. Remove from heat and stir in cooked, drained apples.
  • Preheat an electric griddle to 250 degrees F (120 degrees C). Lightly grease.
  • Combine flour, baking powder, sugar, and salt in a bowl.
