- In a wide, heavy saucepan over medium heat, combine all ingredients. Cook, stirring frequently and adding more cider as needed to prevent scorching, until apples are broken down, 50 to 60 minutes. Mash large pieces with a spoon; add more honey and spices if desired.
- Remove from heat; discard cinnamon stick. Serve warm or at room temperature garnished with pomegranate seeds. Refrigerate in an airtight container up to 3 days.

- 1. Prepare your veggies and chunk roast.
- 2. Season potatoes with salt, pepper, onion powder, Cajun seasoning and a pinch red pepper flakes.
- 3. In a medium skillet (I used my cast iron) on medium heat, heat enough oil to cover bottom of pan. Begin to saute veggies. Add bit more cajun spice and paprika. Leave cook till begins to get browning on potatoes, (about 5 minutes).
- 4. With a spatula turn vegetables, to brown other side; and add the beef to top of veggies to steam a bit.
- 5. Continue to saute, until other side is getting a nice color, then mix in the beef, to finish warming it through.
- 6. Make your eggs.
- 7. Plate the hash.
- 8. Place the eggs a top. You then have one terrific breakfast. There wasn't a morsel left in the pan...lol!

With Fall comes apple season. My favorite time of the year. I love taking advantage of the abundance of delicious apples available. Making my own applesauce is particularly tops on my list. My family loves it. I used Northern Spy and threw in 1/2 a Granny Smith as we like a tart/sweet sauce. Sweeten to your liking and depending what apples you use may require more or less sugar. I add some raisins, but if not a raisin fan, just leave them out. I hope you try it sometimes, it's too darn easy not to. I served it with a pork roast and mashed potatoes. Yum! Enjoy!

- In a medium saucepan, over medium heat, add apples, cider, sugars, cinnamon and bring to a boil.
- Once boiling, reduce heat to simmer and continue cooking until apples are tender and liquid is reduced. ( About 20 minutes ) Once tender, I use a potato masher and coarsely mash the apples. Can sprinkle with additional cinnamon or even chopped nuts for a little added texture. Great warm, but equally as good cold. Up to you. A great accompaniment to pork dishes.
