LIME JELLY

This lime jelly is sweet with bursting lime flavor. I only make this when I can get the limes on sale. Don't use too much food coloring as it will look artificially green. Found this recipe on-line.

Steps:

  • Grate the peel of 5 of the limes; set aside.
  • Squeeze enough juice from 6 to 8 of the limes to measure 3/4 cup; pour juice into medium bowl.
  • Add lime peel and water; mix well. Place three layers of damp cheesecloth over a medium bowl. Pour juice mixture into cheesecloth. Tie it closed and let drip into bowl until dripping stops, about 10-15 minutes. Press gently. Measure exactly 2-1/2 cups prepared juice into a 6-quart pan.
  • Stir sugar into the juice in the pan.
  • Add food coloring if desired.
  • Bring mixture to full rolling boil on high heat, stirring constantly.
  • Stir in pectin. Return to full rolling boil and boil exactly 1 minute.
  • Skim off any foam.
  • Ladle into jars, seal and process 8 minutes.

PLUM JELLY image

Steps:

  • 1. For the juice: Slice your plums in half and take out the pits. Then cut up your plums in small pieces and place in a dutch oven or large sauce pan.
  • 2. Add a cup or so of water and bring to a boil. When you have a full boil, stir, turn it down to simmer and cover the pan for about 10 minutes.
  • 3. Then use your jelly strainer, a pillow case or whatever you use to put your fruit and liquid in over a large dish to catch the juice. Let hang there for about 2 to 4 hours.
  • 4. Have jars ready by washing them with hot soapy water and getting them sterilized while you heat the lids.
  • 5. Now you have your juice measure up 4 cups if you are a little shy you can add water up to a 1/2 c. worth. Put the juice in your pan. (Now you may doubt me if you haven't used liquid pectin, but I ended up reading the insert, because its a bit backward from powdered pectin)
  • 6. Stir sugar into your juice. Mix it in well and add your 1/2 t. of butter or margarine. Bring this mixture to a full rolling boil over a high heat, stirring constantly.
  • 7. When you have that full boil, add your liquid pectin, make sure you get it all and stir it constantly and quickly. Bring it back up to a full rolling boil, while stirring and when you have that full rolling boil, set timer for 1 minute. You can go over that minute a hair, but not under, stir constantly, till timer goes off.
  • 8. Remove from heat. Skim off any foam. Fill jars immediately, leaving 1/2 inch head space. Wipe jars rims to make sure it seals properly. Spoon out your bubbles, cover quickly with lids.
  • 9. Put your filled jars in a hot water bath for 5 minutes. When the 5 minutes is up, take out the jars and set them on a towel in a cool, dry and pretty airless area to sit and cool. You will hear the pings as they seal. When you do the labels remember to add the date. Enjoy ! ! !
  • 10. Be aware, that as with any jelly it can take up to 2 weeks to fully gel. Just discovered that myself when I did this recipe.

Steps:

  • Rinse off the mint leaves, and place them into a large saucepan. Crush with a potato masher or the bottom of a jar or glass. Add water, and bring the mint to a boil. Remove from heat, cover, and let stand for 10 minutes. Strain, and measure out 1 2/3 cups of the mint.
  • Place 1 2/3 cups mint into a saucepan. Stir in the lemon juice and food coloring. Mix in the sugar, and place the pan over high heat. Bring to a boil, stirring constantly. Once the mixture is boiling, stir in the pectin. Boil the mixture for a full minute while stirring constantly. Remove from heat, and skim foam off the top using a large metal spoon. Transfer the mixture to hot sterile jars, and seal.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.

Steps:

  • Blend mint and the water in the jar of a blender until mint is finely chopped. Transfer to a saucepan; bring to a boil. Remove from heat; let steep 45 minutes. Strain mixture through a fine mesh sieve into bowl; reserve liquid (1 3/4 to 2 cups). Discard mint.
  • Return liquid to saucepan; add lemon juice and sugar. Bring to a boil; cook 1 minute. Add pectin, and return to a boil; cook 1 minute. Remove from heat; stir in food coloring. Skim surface. Transfer to a large container; let cool completely. Cover; let chill overnight. Transfer to a serving dish, or store in refrigerator for up to 5 days.

Steps:

  • Wash rhubarb, cut into chunks, and puree in food processor.
  • Use cheesecloth to extract 5 cups of juice.
  • Mix rhubarb, lime juice, and calcium water in pot.
  • Mix pectin and sugar in another bowl.
  • Bring to boil and add sugar/pectin.
  • Bring to boil again, then remove from heat and ladle into prepared sterilized jars, process for 10 minutes, or whatever method you do to can.
  • Note: If you use a surejell or certo, then i suppose just forget the calcium water, but with those you'll have to use about 6 cups of sugar!
