DEEP DISH PIZZA RECIPE BY TASTY
Great news: You don't have to travel to Chicago to eat doughy, cheesy deep dish pizza because now, you can make it right in your kitchen. The most time-consuming part of this recipe is making the dough, but you can prepare it up to a month in advance and freeze it for later. Bake the dough in a deep dish pan covered with homemade tomato sauce, sausage, and cheese until it's golden-brown and bubbling.

I was trying to impress my boyfriend with my cooking, so I made this meaty, deep-dish pizza. I think it worked. Here we are 17 years later, and I still make it for our family at least once a month, if not more! -Stacey White, Fuquay-Varina, North Carolina

RIDICULOUSLY EASY CHICAGO-STYLE PIZZA PIE
Chicago-style pizza is great, but it can be a pain to make and way too expensive to buy from a restaurant... so I came up with this easy-to-make recipe. The best Chicago pizzas usually feature cornbread crusts, but the pie crusts make a surprisingly tasty substitute! I use this recipe by Dan-Amer #1 for the sausage (http://www.food.com/recipe/homemade-bulk-italian-sausage-chicago-style-329000), but store-bought sausage should work just as well.

Steps:
- Preheat oven to 400°F.
- Bake the pie crust according to your package's directions. I usually prick the bottom and sides of the crust all over with a fork and bake it for 10 minutes, or until it becomes slightly golden. Remove, and set aside.
- Brown the sausage for about 5 minutes in a large pan over medium-high heat. Add the onion and mushrooms and cook for a further 5 minutes, or until the sausage is cooked and the onions are soft and translucent. Drain of any excess fat. (You can add salt & pepper at this point depending on how salty/spicy your sausage is- I usually don't).
- Sprinkle the mozzarella and parmesan on the bottom of your pie crust. Top the cheese with the sausage mixture, and spread it out evenly. Next, spread the pizza sauce over the top, making sure the filling is completely covered. Finally, you can sprinkle the Italian seasoning and grated cheese on top, if you wish.
- Bake for 30 minutes. Let cool for at least 5 minutes before serving.

- To make the crust: Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess.
- Mix flour with the rest of the dough ingredients, and knead — by hand, mixer, or bread machine — to make a smooth crust.
- This will take about 7 minutes at medium-low speed in a stand mixer., Place the dough in a lightly oiled bowl or 8-cup measure (which makes it easy to track its rise), cover, and let rise till very puffy, about 60 minutes., While the dough is rising, ready your 14" deep-dish pizza pan.
- Grease it with non-stick vegetable oil spray, then pour in 3 to 4 tablespoons olive oil, tilting it to cover the bottom of the pan, and partway up the sides., Stretch the dough to make as large a circle as you can.

- If roasting veggies, preheat oven to broil, toss veggies in olive oil on a baking sheet, and broil for 4-6 minutes on the top rack (low/medium broil), tossing once for even cooking. Or if using a parchment-lined baking sheet, roast veggies at 450 degrees F (232 C) as the broiling function is unsafe with parchment paper. Remove from oven and set aside.
- Next, coat a 10-inch cast iron skillet or round baking dish with olive oil and run a garlic clove around for seasoning (NOTE: If using a 12-inch cast iron, the recipe should still work you'll just need to stretch the dough a bit more to fit the pan, and use slightly more toppings). Plop your dough down into the pan and push it up around the sides about 1 to 1.5 inches (see photo). Let rest for a few minutes while preparing the rest of your toppings.
