CHAI-SPICED CIDER SPRITZERS
Maple syrup adds sweetness to these cool, spiced apple spritzers.

Steps:
- Bring spices, ginger, syrup, and 1/2 cup water to a boil in a small saucepan. Reduce heat to medium-low, and simmer 2 minutes. Let stand at room temperature 1 hour. Strain, and discard solids.
- Stir together spiced syrup and apple cider in a pitcher, and refrigerate until cold. Pour 1/2 cup spiced cider into each of eight glasses, and top with seltzer. Garnish each glass with ginger.

- In a spice grinder or with a mortar and pestle, combine cardamom pods and peppercorns; grind until aromas are released., In a large saucepan, bring water to boil. Add cardamom mixture, honey, cinnamon sticks, cloves, star anise and ginger; simmer 5 minutes or according to taste. Remove from heat. Add tea bags; cover and steep 5 minutes., Meanwhile, in a small saucepan, heat milk. Strain tea, discarding spices and tea bags. Stir in hot milk and vanilla. Pour into mugs. If desired, sprinkle with nutmeg.

Apple cider is a natural partner for chai spices: cinnamon, cardamom, cloves, black peppercorns, and fresh ginger. Let everything infuse for an hour, or if you really want the flavor of the spices to come through, chill overnight.

Reduce heat to medium-low and simmer gently, stirring occasionally, until reduced by about half, 8-10 minutes. Remove from heat. Add tea bags and press down to submerge. Cover and let steep 5 minutes.
- Strain tea mixture through a fine-mesh sieve into a large measuring glass, pressing firmly on solids to extract as much liquid as possible. Wipe out saucepan. Return chaider to saucepan and reheat over medium until just barely simmering.
- Do Ahead: Cider and tea mixture can be made 5 days ahead. Strain and chill. Gently reheat in a small saucepan over medium heat.
