CHAI TEA

Perfect for cold nights, this masala chai tea recipe incorporates spices that make it so delicious, you'll want to drink it every day. -Kelly Pacowta, Danbury, Connecticut

Steps:

  • Place cloves and peppercorns in a large bowl; with the end of a wooden spoon handle, crush spices until aromas are released., Add the tea bags, sugar, ginger, cinnamon stick and boiling water. Cover and steep for 6 minutes. Meanwhile, in a small saucepan, heat the milk., Strain tea, discarding spices and tea bags. Stir in hot milk. Pour into mugs.

4 whole cloves
2 whole peppercorns
4 tea bags
4 teaspoons sugar
1/4 teaspoon ground ginger
1 cinnamon stick (3 inches)
2-1/2 cups boiling water
2 cups 2% milk

CHANDRA CHAI MOON TEA

This recipe is the culmination of much experimentation in my kitchen. I have omitted black tea, as I am not fond of caffeine. The resulting tea follows in the tradition sprung up on the west coast, particularly the SF bay area, where a fondness for strong spices seems to be most favored, savored and brewed. Add enough soy milk or cows milk to suit your taste.

Steps:

  • In a saucepan, combine water, cloves, fennel seeds, licorice root, allspice berries and vanilla bean. Cover snugly and simmer over medium-low heat for 40 to 50 minutes. Filter into a suitable container and stir in honey. Stir in milk to taste.n

Cardamom Chai image

Steps:

  • Heat the water to a boil. In a separate pan, heat the milk to a boil, stir in the cardamom, cover, and set aside.
  • Place the tea leaves in a heavy pot. Pour in a little of the hot water, then pour it off. Add the remaining hot water. Place over medium heat, bring to a boil, and boil for about 30 seconds, then pour the tea through a strainer into a pot.
  • Add the hot milk by pouring it through a cloth-lined strainer into the tea. Add the sugar and stir. If you wish to froth the tea, pour the mixture into another pot, then pour it back, continuing until it's frothy.
  • Place the pot back over the heat and bring the tea almost to the boil, then pour it into cups.

About 6 cups water
1/2 cup whole or reduced-fat milk
Seeds from 1 green cardamom pod, ground
2 heaping tablespoons black tea leaves, preferably strong-tasting Assam tea
2 teaspoons sugar, or to taste
