CHARCOAL GRILLED CORN WITH SOUR CREAM AND CHILE

Steps:
- Pull all of the husks back from the corn without removing it. Pull off and remove all the silk, using a soft brush to get the last stubborn strands. Return the husks to their original position and twist the tops.
- In a large deep bowl, cover the corn with cold water and weight down with a plate to keep them all submerged. Let the corn soak for 1 hour. Meanwhile, light a charcoal fire and let it burn until the coals are medium hot. Set the grill rack 4 inches from the hot coals. Lay the corn on the grill rack and roast for 15 to 20 minutes, turning frequently with tongs. Pull back some husks to test the kernels for doneness if desired. Remove from the grill, let cool for a few minutes and pull the husks back to the base again so that you can use them as a handle for picking up the corn. Set aside until ready to serve the rest of the meal. Brush the corn with the butter and return it to the grill rack for about 10 minutes, turning frequently, until nicely browned. Sprinkle the corn with the chile powder and pass the sour cream and cheese at the table for guests to help themselves.
GRILLED BABY ONIONS WITH CREAM & BASIL

- Simmer the onions in the stock for 30 mins, adding a little water if needed to keep them covered. Meanwhile, in a small pan, melt the butter, then add the flour and cook for 1-2 mins. Stirring constantly, gradually pour in the milk, then the cream, and bring to the boil. When you have a smooth white sauce, remove from the heat. Allow to cool a little before stirring in the egg yolks, spices and seasoning.
- Heat grill to high. Drain the onions and lay them in a single layer in an ovenproof dish. Spoon over the cream sauce to cover. Grill for 5 mins until lightly browned, then scatter over the basil before serving.

GRILLED BABY ONIONS
If you love onions, you will love this, I can make a meal just on these onions alone lol! Make sure that you purchase small sweet baby onions for this. Plan ahead the onions need to marinade for about 1 hour. You can double the recipe if desired.

- In a large glass bowl, mix/whisk all the marinade together until well combined (or process in a processor).
- Pour the marinade in a large resealable plastic bag.
- Add in the peeled onions.
- Seal bag and marinade at room temperature for about 1 hour (turning the bag occasionally to coat the onions in marinade).
- Meanwhile soak the wooden skewers in cool water while the onions are marinating.
- Preheat grill to 400°F.
- Remove the onions from marinade and thread about 3-4 onions per skewer (depending on the size of your onions).
- Place the onions on the grill and turn every minute to prevent them from burning (cook the onions for about 5-7 minutes).

- Prepare grill for indirect heat. Peel onions, leaving root ends intact. Cut a thin slice from the top of each, then carefully cut a 1-in. hole in the center. Cut each onion into quarters, cutting to within 1/2 in. of bottom. Place each onion on a double thickness of heavy-duty foil (about 12 in. square)., Sprinkle bouillon, thyme, salt and pepper into centers; top with butter. If desired, drizzle with wine. - Fill a chimney starter to the rim with charcoal and burn the charcoal until it is lightly covered with ash. Spread the charcoal in a tightly packed, single layer across one-half of the charcoal grate. Let the coals burn down to medium heat (350° to 450°F). Leave all the vents open.
- With the onions still in their skins, place them on the charcoal grate against the charcoal. Close the lid and cook the onions until very tender, 1 to 1½ hours. Occasionally swap the positions of the onions for even cooking and turn the blackened skins away from the charcoal. When very tender, the onions will be blackened in spots all over and a knife blade will slide in and out of each onion like it is a ripe peach. Some onions may take longer than others.
- Remove the onions from the grill and let cool completely. Carefully remove the skin from each onion, being careful to leave the root ends intact so they hold the layers of the onions together. Cut each onion lengthwise through the stem and root ends.
- At this point, to finish cooking the onions, you will need to add more charcoal to the fire to return it to medium heat (350° to 450°F) .
