- Combine biscuit mix and cornmeal in a large bowl. Whisk eggs and milk; stir into dry ingredients. Transfer to a greased 9-in. oven-proof skillet., Bake at 400° until a toothpick inserted in center comes out clean, 15-20 minutes. Cut into wedges. Serve warm.

- Preheat oven to 400°F.
- Grease an 11x7x1 1/2 inch baking pan.
- Combine muffin mix, cheese and onion.
- Stir in, but do not over mix, egg, then milk, then kielbasa.
- Spoon into the prepared pan and bake for 30 minutes or until an inserted toothpick comes out clean.

- Preheat oven to 400.
- In a large skillet heat vegetable oil. Add chopped onion and garlic and sauté just a few minutes to the flavors to blend.
- Add ground beef and cooked until browned. Add oats and incorporate well.
- Add beans, spaghetti sauce, chicken broth and seasonings; simmer 20 minutes.
- Spoon chili into a sprayed 13 x 9 baking dish. Sprinkle evenly with cheese.
- Spoon corn muffin batter (prepared according to package directions), like dumplings over the top of the casserole. Bake 20 to 25 minutes or until corn bread dumplings test done.

- Set oven to 350 degrees.
- Set oven rack to second-lowest position.
- Grease a 13 x 9-inch baking pan, and line bottom of pan with parchment paper.
- Combine first 5 ingredients in a bowl, mix well.
- Whisk in vegetable oil and mix until dry mixture is smooth and lumps are gone.
- In a medium or large bowl, with an electric mixer, cream the sugar and butter until no granules remain (about 4 minutes).
- In a small bowl sift together flour, baking soda and salt.
- Add to the creamed mixture along with the buttermilk; mix well until blended (about 2-3 minutes).
- Add in eggs and almond extract (if using); beat very well for 5 minutes on high speed.
- Transfer to a prepared cast iron pan.
- Bake on second-lowest oven rack for 45-60 minutes (check for doneness after 25 minutes).
