CHARD AND RAISIN MEATLOAF WITH SWEET AND TANGY GLAZE

Use crushed crackers instead of breadcrumbs and add Swiss chard and golden raisins for a savory meatloaf with a few hints of sweetness.

Chard and Raisin Meatloaf with Sweet and Tangy Glaze image

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the meatloaf mix, chard, crackers, raisins, dill, parsley, Worcestershire, eggs, onion, garlic, 1/4 cup of the ketchup, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9 inches by 5 inches. Bake for 30 minutes.
  • Stir together the apricot preserves, soy sauce, ginger, vinegar and remaining 1/4 cup ketchup in a small bowl for the glaze. Remove the meatloaf from the oven and brush the top and sides all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)

  • combine all ingredents for the meatloaf. press into greased or sprayed small bread pan. Bake 45 minutes at 350 degrees. then spread the prepared barbeque glaze over the top and put back in oven for 15 minutes.
  • To prepare barbeque glaze. put all ingredents in small sauce pan. simmer about 20 minutes or until thickened.

Cheddar-Topped Barbecue Meat Loaf image

Steps:

  • Cut three 18x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 3-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine eggs, oats, chopped pepper, onion, soup mix, garlic, salt and pepper. Add beef; mix lightly but thoroughly. Shape into a 7-in. round loaf. Place loaf in center of strips in slow cooker. Cook, covered, on low for 3-4 hours or until a thermometer reads at least 160°., In a small bowl, mix ketchup, brown sugar, barbecue seasoning and mustard; pour over meat loaf and sprinkle with cheese. Cook, covered, on low until cheese is melted, about 15 minutes longer. Let stand 5 minutes. Using foil strips as handles, remove meat loaf to a platter.

LIL' CHEDDAR MEATLOAVES

We have given up all other meat loaf recipes for this one. I love the individual servings and every bite has the yummy catsup sauce where in "regular" meat loaf it's just a small strip on top! With the smaller loaves it also makes the cooking time a bit quicker. This recipe came from '99 TOH magazine but I added the rubbed sage for some extra flavor. Enjoy!

Lil' Cheddar Meatloaves image

Steps:

  • In a bowl, beat the egg and milk.
  • Stir in cheese, oats, onion, salt and rubbed sage.
  • Add beef and mix well.
  • (It will seem runny at first but will thicken up as you mix.) Shape into 8 equal sized loaves (oval/egg shaped) and place in a greased 9X13X2" baking dish.
  • Sauce: Combine catsup, brown sugar and mustard.
  • Spoon over each loaf so they are all covered in the sauce.
  • Bake uncovered at 350 degrees for 45 minutes or until meat is no longer pink and a meat thermometer reads 160 degrees.
  • For OAMC:.
  • To Freeze:Place the meat loaves in the casserole dish (without sauce).
  • Wrap with foil and freeze.
  • To Reheat: Defrost overnight.
  • Mix together the sauce and top each meat loaf with sauce.
  • Bake at 350 degrees for 45 minutes or until meat is no longer pink in the center.
  • Cooked meat loaves (already topped with sauce) also freeze very well and then can be defrosted and heated in the microwave for a quick meal.
