BROCCOLI CHEESE STROMBOLI

- Preheat the oven to 400 degrees F. Oil a baking sheet with 1 tablespoon olive oil and set aside.
- Heat the butter in a large skillet over medium heat. Add the onion and garlic and cook for 2 minutes. Add the broccoli and season to taste with salt and pepper. Cook until the broccoli has softened slightly and become bright green, about 1 minute. Remove from the heat and set aside.
- Lightly flour a clean work surface and stretch or roll the dough into a large rectangle, about 11-by-13 inches. With the long side closest to you, spread the pesto on the dough, leaving about a 1-inch border on all sides. (You'll want to maintain the 1-inch border when adding the remaining toppings.) Top the pesto with the broccoli mixture and sprinkle over the Cheddar. Shingle the mozzarella slices over the Cheddar. Sprinkle on the basil leaves.
- Fold the short sides in, then roll the dough into a log. Place the stromboli seam-side down on the prepared baking sheet. Using a sharp knife, make 5 to 6 diagonal slits on top of the dough. Brush the top with the remaining tablespoon olive oil and sprinkle with the grated Parmesan.
- Bake until golden brown, about 20 minutes.
- Allow to cool for about 5 minutes before slicing and serving. Serve the warmed marinara alongside and top each serving with some more fresh basil.
EASY CHICKEN STROMBOLI
You can add any cooked vegetable (mushrooms, red pepper, green pepper, spinach) to this to add more flavor. The cooking and prep time includes the time you need to let the dough rise. Enjoy!

- Let dough rise in warm place until doubled in size.
- Roll dough out on a floured surface. Shape into a 12"x14" Rectangle. Place diced chicken, cheddar cheese, mozzarella cheese, chopped onion, 1/4 cup Parmesan Cheese and sprinkle with Garlic Salt, leaving 1/2" without the filling so you can pinch and seal it closed. Roll up jelly roll style (start with long side) and fold ends and pinch to seal. Place onto a greased baking sheet seam side down. Cover and let rise 45 minutes.
- Beat egg and add water to make an egg wash. Brush egg wash onto dough and sprinkle with remaining Parmesan Cheese and sprinkle with Garlic Salt. Bake at 350 for 30 minutes or until it is golden brown.

CHEESE AND CHICKEN STROMBOLI
A faster stromboli that kids love. Of course you don't have to use a jelly roll pan to cook this, you can use a 13 X 9 pan or even just a baking sheet. This can also be frozen and reheated in the microwave.

- Preheat oven to 400 degrees.
- In a medium bowl, mix the chicken, mozzarella, 1/2 cup spaghetti sauce, Parmesan cheese and parsley. Set aside.
- Spray a jelly roll pan with nonstick cooking spray. Roll dough to form a 12 X 10 inch rectangle.
- Pour the chicken down the center of the dough. Fold the dough over to cover the chicken mixture, pinching all the seams and ends to seal.
- Place on the prepared pan, seam side down. Gently press the dough to form about a 12 X 4 inch loaf.
- Bake for 35 minutes or until the dough is golden.
- Cut into slices. Serve with the remaining pasta for dipping.

This is a chicken and potato casserole recipe I made up and may still need tweaking. It only takes a few ingredients and is super easy to make.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Coat the bottom of a large baking dish with olive oil.
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until halfway cooked, about 10 minutes. Drain and place in the prepared baking dish.
- Combine corn, condensed soup, chicken, milk, sour cream, and melted butter in a large bowl; stir to combine. Pour mixture on top of potatoes and spread evenly across the baking dish. Cover with aluminum foil.
- Bake in the preheated oven for 20 minutes. Remove from the oven, discard aluminum foil, and sprinkle Cheddar cheese on top of the casserole. Bake until melted, another 10 minutes.

- Preheat oven to 425 degrees F (220 degrees C). Let dough rise according to package instructions, then punch down, and divide into 4 pieces.
- On a floured surface, roll each piece of dough into a long oval shape. Spread each with sauce, then layer with ham, capacola, salami, and pepperoni.
