DAD'S FAVORITE CHEESY POTATOES IN FOIL
An old favorite of my dad's that was a childhood summertime staple at BBQs ... it's an easy and delicous side with very little cleanup!

Steps:
- Slice potatoes thinly onto a big piece of heavy aluminum foil and sprinkle with salt and pepper.
- Crumble bacon over potatoes. Add onion and cheese cubes.
- Slice butter over all and mix mixture gently on the foil.
- Bring edges of foil up, leaving room for steam expansion. Seal with a double fold.
- Place package on grill and cook about 1 hour, turning several times. Be careful not to burn.

- Prepare campfire or grill for medium heat. In a large bowl, toss potatoes with onion, bacon, butter, salt and pepper. Place on a large piece of greased heavy-duty foil (about 36x12-in. rectangle). Fold foil around potatoes, sealing tightly., Cook on campfire or in covered grill until potatoes are tender, about 15 minutes per side. Open foil carefully to allow steam to escape; place cheese over potatoes. Cook until cheese is melted, 1-2 minutes. If desired, serve with sour cream.

- In a large bowl, combine the first six ingredients. Transfer to a double thickness of greased heavy-duty foil (about 18 in. square). Dot with butter. , Fold foil around potato mixture and seal tightly. Grill, covered, over medium heat for 15-18 minutes on each side or until potatoes are tender., Carefully open foil. Sprinkle the bacon cheeses over potato mixture. Grill 3-5 minutes longer or until cheese is melted. Open foil carefully to allow steam to escape.

- Thinly slice the potatoes and place in a greased shallow 2-qt. baking dish. In a small skillet, melt butter; stir in the onion, salt, thyme and pepper until onion is coated with butter. , Spoon over potatoes. Cover and bake at 425° for 45 minutes or until potatoes are tender. Sprinkle with cheese and parsley. Bake, uncovered, 15 minutes longer or until cheese is melted.

CHEESY RANCH POTATO FOIL PACKS - A SOUTHERN SOUL

- Place potatoes in a large bowl. Drizzle on olive oil. Sprinkle on ranch seasoning, salt and pepper. Toss to coat potatoes. Place potatoes in center of each of four foil rectangles dividing equally. Fold foil and seal ends. Place on grill seam side down for 10 minutes. Turn pack over and continue to cook for 10 minutes.
- Remove packets from grill and carefully open. Sprinkle cheese on top of potatoes and place packet back on grill, closing lid, for 3-4 minutes, until cheese is melted. Top with addition salt and pepper if desired.
- Heat oven to 400 degrees. Prepare potato foil packs as instructed above. Cook in oven seam side down for 10 minutes then turn and continue to cook 15 more minutes until potatoes are done. Remove packets from oven, open and sprinkle on cheese. Return to oven for 2-3 minutes until cheese is melted.
