STOVETOP CHEESEBURGER PASTA

- Cook pasta according to package directions; drain., Meanwhile, in a Dutch oven, cook and crumble beef over medium heat until no longer pink, 5-7 minutes. Remove from pan with a slotted spoon; pour off drippings., In same pan, melt butter over low heat; stir in flour until smooth. Cook and stir until lightly browned, 2-3 minutes (do not burn). Gradually whisk in milk, broth, Worcestershire sauce and mustard. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Stir in tomatoes; return to a boil. Reduce heat; simmer, covered, 5 minutes., Stir in green onions, pasta and beef; heat through. Stir in half of the cheeses until melted. Sprinkle with remaining cheese; remove from heat. Let stand, covered, until melted.

- In a 6-quart stockpot, cook bacon over medium heat, stirring occasionally, until crisp, 6-8 minutes. Remove with a slotted spoon; drain on paper towels. - Heat the oil in a large pot or Dutch oven over medium-high heat. Add the white and light-green parts of the scallions and cook, stirring occasionally, until softened, 2 to 3 minutes. Stir in the garlic and cook until just fragrant, about 1 minute. Add the ground beef, 1 teaspoon salt and a few grinds of black pepper and cook, breaking up the beef into small pieces, until no longer pink, 5 to 6 minutes.
- Stir in the ketchup, mustard and tomato paste. Add the milk, macaroni, 2 cups water, 3/4 teaspoon salt and a few grinds of black pepper and stir to combine. Bring the mixture to a boil, then reduce to a simmer, cover and cook until the pasta has absorbed most of the liquid and is softened, 13 to 15 minutes.
- Uncover (any remaining liquid will thicken as the dish sits), add the cheese and stir until melted. Garnish with the parsley and remaining scallion greens.

- Heat a large Dutch oven over medium-high until hot. Divide beef into 4 large loosely packed balls and place in Dutch oven. With a sturdy spatula, aggressively flatten balls as though you were making smash burgers; season with salt. Cook, undisturbed, until patties are well browned and crisp on the bottom, about 4 minutes. Turn each patty, season with salt, and continue to cook until second side is well browned, about 3 minutes longer. Transfer patties to a plate and let cool slightly.
- Reduce heat to medium. Cook onion in pot, stirring often, until golden and browned around the edges, 10–15 minutes. (Some light scorching and sticking is okay here; don’t be shy.)
- Add garlic to pot and cook, stirring, until fragrant, about 30 seconds. Using a wooden spoon or spatula, push onion-garlic mixture to one side of pot to make space, tilting pot if necessary to get some hot fat over to the empty side. Add tomato paste to empty space and stir in hot fat until fragrant and begins to darken, about 2 minutes. Add tomatoes, banana peppers, soy sauce, red pepper flakes, and chopped meat and stir everything in pot together. Cook, stirring occasionally, until sauce is simmering and flavors have melded, about 10 minutes. Reduce heat to low and keep warm until ready to use.
