- In a large nonstick skillet coated with cooking spray, saute the yellow pepper, onion and garlic in oil for 2 minutes. Stir in the tomatoes and corn; cook 2 minutes longer. Add the black beans, pepper and salt. Cook until vegetables are tender; drain., Spritz one side of each tortilla with cooking spray; place plain side up on baking sheets coated with cooking spray. Spoon bean mixture onto half of each tortilla; sprinkle with cheese. Fold tortilla over filling. , Bake at 400° for 6 minutes. Carefully turn over; bake 4-7 minutes longer or until cheese is melted.

- Top half of each tortilla with beans, cheese, bacon and scallions. Fold tortilla over filling; press down with back of pancake turner. Lightly brush melted butter on both sides of each filled tortilla.
- Heat 12-inch nonstick skillet over medium heat. Cook 2 filled tortillas at a time 3 to 4 minutes, turning once, until golden brown and heated through. Cut into wedges. Serve with sour cream and salsa.

This recipe was adapted from a Morningstar Farms Chipotle Black Bean Burger box and is really delicious! My husband LOVED it. All of the ingredients are healthy, and it can be easily incorporated into a low carb, low fat diet without sacrificing taste.

Steps:
- Preheat your oven to 375 degrees.
- Heat the black bean burgers in the microwave for about two minutes.
- While the burgers are heating, slice the tortillas in half, set aside, and then place the butter in a small bowl.
- Remove the burgers from the microwave and insert the butter to melt.
- Chop up the burgers into small pieces and place them in a mixing bowl.
- Add the salsa, cheeses, cilantro, and seasonings and mix them together well.
- Place about 2 heaping tablespoons of mixture into the center of a tortilla half.
- Fold one corner of the tortilla over the mixture, then fold the other corner over that one and secure with a toothpick. You'll have a kind of triangle with one pointed edge and opposite of it, a semi-rounded open side.
- Place the triangles on a baking sheet and brush each with the melted butter.
- Bake for about 12-15 minutes, depending on desired crispiness. Cool before serving.

- In a bowl, coarsely mash beans with a potato masher. Warm a large skillet over medium-high heat; add corn and cook for 3 to 4 minutes, stirring occasionally, until corn begins to brown. Add corn to bowl with beans.
