- Preheat oven to 375°F. Season chicken breasts with lemon pepper. Place in 9x13-inch baking dish. Combine honey, mustard, lemon juice and paprika. Pour over chicken. Bake for 20-25 minutes. Top each chicken breast with 1 tablespoon of bacon and 1/4 cup mozzarella cheese. Continue to bake until cheese is starting to brown, about 10 minutes.
HONEY-AND-SOY-GLAZED CHICKEN THIGHS
In this simple weeknight recipe, chicken thighs are tossed with a sweet-salty glaze made of honey and soy sauce that caramelizes into a sticky coating as it roasts in the oven. Serve the sliced chicken with bibb lettuce cups for wrapping, or over steamed rice to catch all the juices. Leftovers can be chopped and combined with vegetables for a tasty clean-out-the-fridge fried rice.

- Heat the oven to 425 degrees. Heat 1 tablespoon oil in a small saucepan over low heat. Add the garlic and ginger and cook, stirring occasionally, until softened, 3 minutes. Add the soy sauce and honey and simmer, stirring occasionally, until reduced and slightly thickened, about 10 minutes. (You'll want to cook attentively for this step, as the syrupy mixture can burn if it cooks too long.) Turn off the heat then whisk in the butter. Season with salt and pepper.
- On an aluminum foil-lined rimmed baking sheet, season the chicken all over with salt and pepper. Add half the glaze and the remaining 1 tablespoon oil and toss the chicken to coat. Arrange in an even layer, skin side up, and roast until browned, 15 minutes. Brush the chicken all over with 2 tablespoons of the remaining glaze. Roast until golden and cooked through, about 10 minutes.
- Drizzle the chicken with the remaining glaze and serve with lemon wedges.

- Place 1 tablespoon of butter in an 11x7-in. microwave-safe dish; set aside. Combine cracker crumbs and pepper. Dip chicken in remaining butter, then spread with sour cream. This recipe was passed down through my family. I have "upgraded" it a bit over the years and it is seriously an awesome chicken dish. Serve it with rice or roasted potatos. Its always a winner!

- Clean chicken breasts, place in a sealable plastic bag or container. Pour bottle of marinade over chiken and let chill for 1-2 hours, or overnight if you choose. Heat up the grill or grill pan to medium-high to start. After the first side of the chicken is browned, flip it and turn the girll to medium. Preheat a large pan for onions over medium high heat, add olive oil and butter to onion pan. Add to hot pan, add salt and pepper and cook onions until slightly browned 8-10 minutes. When chicken is almost done pile onions and cheese on top of each piece of chicken, making sure to portion so there will be enough for each piece.
- Close grill lid or make a foil lid for your grill pan to allow the cheese to melt for 2-4 minutes. Remove and place on serving tray.
- Combine honey and mustard, drizzle over chicken breasts, leaving some for dipping.
- Serve!
