A 'stuffed' meatloaf made with beef, pork, cheese, eggs, soup mix and bread crumbs. Mozzarella cheese jazzes up a classic.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine the beef, pork, soup mix, eggs, bread crumbs, pepper and water. Stir in 1/2 cup of the cheese. Mix well and spread half of mixture into a 9x5 inch loaf pan. Spread remaining 1 1/2 cups cheese over meat loaf mixture. Top with remaining half of meat loaf mixture.
- Bake in preheated oven for 60 minutes. Let cool 10 to 15 minutes before serving.

CHEESY MEAT LOAF PIE
This is a tasty cross between meat loaf and pizza. Often, I divide it into two pans, bake one for me and freeze the other. That way, I'm ready for drop in company or potluck suppers. - In a large bowl, combine the milk, bread crumbs and garlic salt. Crumble beef over mixture and mix well. Press onto the bottom and 1 in. up the sides of a greased 9-in. pie plate. , Bake, uncovered, at 350° for 20 minutes; drain. Spread with ketchup. Sprinkle with the cheddar cheese, oregano and Parmesan cheese. Bake 3-5 minutes longer or until meat is no longer pink and a thermometer reads 160°.

- Preheat 350 degrees.
- Combine meat, soup mix, oats, eggs, water, and ketchup with large mixer on low.
- Slowly add cheese until well-blended.
- Shape into loaf.
- Bake for 45 minutes.

- Preheat oven to 400 degrees F (200 degrees C).
- In a bowl, mix the turkey, milk, bread crumbs, and eggs by hand. Season with salt and pepper. Fold the cheese cubes into the mixture. Transfer to a loaf pan, and top with ketchup.
- Bake 1 hour in the preheated oven, to an internal temperature of 180 degrees F (85 degrees C).

CHEESY MEATLOAF
Easy, freezes well (raw), and can be tripled. If you sub in ground turkey, that is good too. While I was still working I would put meatloaf in oven (frozen) with baker potatoes (wrapped in foil) and baked carrots in the morning before I left the house, and set up my delay bake cycle on my oven and come home to a nice meal. If you do have leftovers, you can cube the leftovers up and add to spaghetti sauce or make yourself a sandwich.

Steps:
- Mix first nine ingredients.
- Put half of meat mixture into loaf pan.
- Top with shredded mozzarella.
- Then cover with rest of the meat mixture.
- Bake at 350°F oven for 1 hour and 15 minutes.
- If you freeze it (raw), double wrap in foil.
- To make in crockpot (which I have not done yet)--put 3 heavy duty foil strips, each measuring 18 X 3 inches in a crisscross so they resemble spokes of a wheel in crock pot. Place meatloaf in the center of the strips. Pull the foil strips up and over the meatloaf. Cover. Use the foil as handles to lift out. Estimating time at 8 hours on LOW or 4 hours on HIGH. Also, read that you can cut up two potatoes, into finger size pieces and put that underneath the meatloaf in crock pot. Ummm.

- For meatloaf.
- Preheat oven to 350°F.
- Mix all but bread and sauce.
- Shape into a loaf.
- Line loaf pan with two slices of white bread.
- Put meatloaf on top of bread.
- Bake for 45 minutes.
- Bread will soak up the extra grease. Make sure to discard it when cooking is done.
- For sauce.
- Heat soup and milk over med. heat.
- Add cheese.
- Add chopped onion and parsley if desired.
- Pour over meatloaf or pass around the table.

This recipe is so easy that I can put all the ingredients on the same shelf in the refrigerator and have my husband throw it together on soccer practice nights. It can also easily be assembled and refrigerated to pop into the oven after work. I keep wondering what it would be like as leftovers, but there is never any left!

- 2. In a bowl add your cheetos and crush them so they are all broken up but still somewhat course).
- 3. Add milk and let sit for 2 minutes.
- 4. After it sits crack the egg into it.
- 5. In large bowl add your meat and onion soup mix.
- 6. mix with hands until all the soup mix is incorporated through all the meat.
- 7. in the cheeto mixture, crack the yolk of egg with a spoon and spoon the whole mixture into meat.
- 8. mix with hands until it is all mixed together slowly crushing the saltines into it (you may need more or less depending on the consistency and the fat content of the meat).
- 9. put half of the ketchup on the bottom of the pant you are cooking meatloaf in (I prefer a 9x13 baking dish).
- 10. spread it around.
- 11. form the meatloaf shape in your hands and put on top of ketchup and form the loaf more so its a even oblong shape.
- 12. put remaining ketchup over the top of it.
- 13. add whatever seasonings you like over the top (I like to crush a cracker over the top and put garlic salt and a little Parmesan cheese).
- 14. Bake for 1 hour.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a loaf pan with cooking spray.
- Spray a medium skillet with cooking spray. Add onion and garlic and saute until the onion is tender, about 5 minutes. Set aside to cool.
- Mix ground turkey, cheese cubes, crushed crackers, 1/3 cup ketchup, egg, garlic salt, salt, and pepper in a large bowl. Add cooled onion and garlic mixture and mix until well combined. Transfer to the prepared loaf pan. Place the loaf pan on a baking sheet and cover with aluminum foil.
