CHEESY MUSHROOM AND BROCCOLI CASSEROLE

- Preheat oven to 425 degrees F.
- Butter casserole dish. In a large pot, melt 3 tablespoons butter and flour over medium heat until golden in color to make a quick roux. The roux should resemble the color of peanut butter. Add mushrooms, onion, garlic, garlic powder, cayenne pepper, heavy cream and chicken stock. Add broccoli, 1 cup of the cheese and rice. Season with salt and pepper, to taste. Pour into buttered dish and top with remaining shredded Cheddar. Bake until cheese is melted and golden, about 20 minutes.

- In a large skillet, cook bacon over medium heat until crisp. Remove bacon to paper towels. Drain, reserving 2 tablespoons drippings. In the drippings, saute mushrooms and onion until tender. Add garlic; cook 1 minute longer. Stir in the flour, salt and pepper; cook and stir for 1-2 minutes or until thickened. , Reduce heat. Add the cream cheese, sour cream, Worcestershire sauce and soy sauce; cook and stir until cheese is melted. Stir in bacon. Serve warm with vegetables or crackers.

This dip has all the best ingredients I've found from various other recipes and it's my favorite by far! Serve as a dip at a party or with sour cream and jalapenos to make nachos and use it as a main course!

- Heat a large skillet over medium-high heat. Crumble sausage and ground beef into the skillet; add the onion. Cook and stir the beef mixture until the meat is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease. Pour into a slow cooker.
- Layer cheese food cubes atop meat mixture.
- Blend diced tomatoes with green chile peppers in a blender until smooth; pour over the cheese cubes along with the cream of mushroom soup. Stir the mixture.
- Cook on High, stirring occasionally until the cheese is completely melted, about 90 minutes.

Steps:
- Heat the oil and melt the butter in a pan.
- Add the onion and cook until it starts to caramelize, about 20 minutes.
- Add the mushrooms and sauté until they start to caramelize, about 20 minutes.
- Add the garlic and thyme and sauté until fragrant, about a minute.
- Season with salt and pepper.
- Add the wine, deglazed the pan and cook until it has evaporated.
- Puree 1/2 of the mushrooms in a food processor.
- Mix the mushrooms, cream cheese, sour cream, mayonnaise, mozzarella and parmigiano reggiano and place in a baking dish.
HOT SPINACH DIP WITH MUSHROOMS

- Put the spinach in a large microwave-safe bowl; cover with plastic wrap and pierce a few times to vent. Microwave until it starts wilting, about 4 minutes. Uncover and stir, then microwave until completely wilted, about 2 more minutes. Transfer to a colander and rinse under cold water; squeeze dry and set aside.
- Heat the olive oil and butter in a large saucepan over medium-high heat. Add the onion, poblanos and 1/2 teaspoon each salt and pepper and cook, stirring, until the onions are translucent, about 4 minutes. Add the mushrooms and cook, stirring, until tender, about 5 minutes. Reduce the heat to medium; add the garlic and flour and stir until incorporated, about 2 minutes.
- Gradually stir in the chicken broth and bring to a simmer. Add the sour cream and cook, stirring, until the liquid thickens, about 5 minutes. Remove from the heat and stir in all but a few tablespoons of the gruyere, then stir in the muenster and cilantro. Transfer to a food processor and add the spinach; pulse until finely chopped.
- Preheat the oven to 400 degrees F. Spread the dip in a 1-quart baking dish and sprinkle with the reserved gruyere. Transfer to the oven and bake until the cheese melts, about 6 minutes. Serve with bread.

- 1) Heat a large nonstick skillet over medium heat and add 1 tablespoon of oil. Add the sliced onions and a sprinkle of salt. I know it seems like a lot of onions, but they will wilt down. Cook over medium heat for about 10 minutes until onions begin to soften. Turn heat to low and cook for another 20-30 minutes until onions begin to caramelize.
- 2) While the onions cook add the parmesan, cream cheese, sour cream, mayonnaise, salt, and pepper to a large bowl and mix until thoroughly combined. Set aside.
- 3) Preheat oven to 400 degrees. Once the onions have been cooking for 20-30 minutes add chopped mushrooms to the pan along with 1 teaspoon of canola oil and cook for another 5-10 minutes until mushrooms are soft.
- 4) Add the onions and mushrooms to the cheese mixture and stir. Pour the entire mixture into an oven-safe pan and bake for 20 minutes until the top is brown and bubbly. Serve hot with toasted baguette.
