- Heat oven to 375 degrees.
- Flatten the chicken breast to about 1/4-inch thickness.
- In a large bowl, mix together cream cheese, spinach, garlic, nutmeg, seasoning salt and pepper (or cayenne pepper) until well combined.
- Mix the dry breadcrumbs with Parmesan cheese in a shallow bowl; set aside.
- Mix together the melted butter with garlic powder; set aside.
- Spoon equal amounts of mixture across the narrow end of each breast.
- Roll up jelly-roll style, and secure with toothpicks.
- Dip the stuffed breast into the egg, then roll into the dry breadcrumb mixture.
- Place into a buttered baking dish, seam-side down.
- Drizzle with butter/garlic mixture.
- Bake for about 30 minutes.

Steps:
- Sauté the garlic and spinach in oil until the spinach wilts. Add the ricotta, parmesan, salt, and pepper, and stir until heated.
- Preheat oven to 450°F (230°C).
- Salt and pepper the chicken breasts, add the cheese mixture, and roll 'em up.
- Dip each chicken breast roll-up in the egg, then the breadcrumbs, and place in a 8×8 (20 x 20 cm) or 9×9 (22 x 22 cm) baking dish seam side down.
- Bake for 25 minutes.
- Remove from oven and top with marinara sauce and mozzarella. Bake an additional 5 minutes. Remove from oven and top with basil.

- Preheat oven to 375 degrees. Prepare a large baking sheet by spraying it lightly with nonstick spray; set aside. Place butter in a skillet and bring to medium-high heat on the stove. Once butter has coated the bottom of the skillet, add onion and salt. Stirring often, sauté until softened and slightly browned, about 6 minutes. Reduce heat to medium low. Stirring occasionally, continue to cook onion until browned and caramelized, about 15 minutes. Transfer to a large bowl and set aside. Return skillet to medium-high heat on the stove. Add spinach and garlic and cook until the spinach has wilted, 1 - 2 minutes. Transfer mixture to the large bowl. Add chicken and cheese to the bowl, breaking the cheese wedges into pieces as you add them. Mix thoroughly and set aside. Place two egg roll wrappers on a clean, dry surface. Evenly distribute 1/6th of the mixture (about 1/3 cup) in a horizontal row a little below the center of each wrapper. Moisten all four edges of each wrapper by dabbing your fingers in water and going over the edges smoothly. Fold in the sides of each wrapper about an inch toward the middle, over the filling to prevent it from escaping. - Warm olive oil in skillet over medium heat.
- Add garlic and onion and cook until soft.
- Add spinach and season with pinch of salt and pepper.
- When spinach has wilted and is coated with oil and aromatics, remove from heat and set aside.
- Take chicken breast and flatten to 1/8th of an inch.
- Season chicken with liberal amount of kosher salt and pepper and then set aside.
- Take colby jack, mozzarella, and parmesan cheeses and combine.
