CHEESY SWISS BAKE
A recipe I found on bbcgoodfood.com website while searching for recipes for Switzerland. Sounds delicious. Here is what is stated about the recipe: "A hearty Alpine-style bake with rich cheese and smoky bacon - ideal after a day on the slopes...or just a walk round the park."

Steps:
- 1. Heat oven to 400F/200C/fan 180C/gas 6. In a large pan, bring water and potatoes to a boil, and boil the potatoes for 5 mins, then drain and tip into a large mixing bowl.
- 2. Melt the butter in a saucepan and gently fry the onion until soft. Add the bacon and cook for a further 5 mins. Mix the bacon and onion with the potatoes in the bowl.
- 3. Stir in the wine, cream, most of the cheese and a little paprika. Season (with salt and pepper to taste) and mix together, then spread over a large (30cm long x 4cm deep) buttered baking dish. Sprinkle with the remaining cheese, cover with foil and bake for 25 mins. Remove the foil, sprinkle a little more paprika over the top and cook for a further 20 mins until the cheese is golden brown.

- Preheat an oven to 350 degrees F (175 degrees C).
- Place chicken in a large baking dish. Scatter mushrooms around and sprinkle with Swiss cheese. In a small bowl, combine cream of mushroom soup, sour cream, and chicken broth. Pour sauce mixture over chicken.
- Bake the chicken breasts in the preheated oven until no longer pink in the center and the juices run clear, about 50 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the oven and sprinkle with Parmesan cheese and return to oven. Bake for an additional 5 minutes.

- In a saucepan, cook broccoli until crisp-tender; drain and set aside. In another saucepan, melt butter; add flour. Cook and stir until thickened and bubbly. Stir in onion. Try this with a fruit bowl, cinnamon rolls and sliced ham for a complete brunch. Kids always seem to love this casserole, at least mine and their friends do! This makes 2 casseroles, but it can easily be halved. I have never frozen it and wonder how it would be to freeze one casserole.

- Preheat oven to 350.
- Combine soup, milk, onion and mustard all together in a saucepan.
- Heat on medium until warm.
- Stir in cheese until melted.
- Pour 1 cup sauce into each of 2 10x6 baking dishes.
- CAREFULLY, break six eggs into the sauce in each pan, 3 down the length of each pan on each side.
- Carefully cover all BUT the yolks with the remaining sauce.
- Line each side of both pans with the bread slices.
- Bake for 20 minutes or until the eggs are to desired doneness.
- The eggs will cover themselves as they bake.

- Preheat the oven to 190C/gas 5/fan 170C and butter a shallow 2-litre dish. Tip the spinach into a colander in the sink and pour a kettleful of boiling water over it. Leave it to wilt while you make the cheesy base. (Or microwave the spinach according to the packet instructions.)
- Break the eggs into the bowl of a food processor, pour in the milk, add the mustard and 1 tsp salt. Tear in the bread, crusts and all, then whizz together until smooth. Tip the mixture into a large bowl and grate in three-quarters of the cheese.
- Squeeze the spinach, to get rid of all the water, then stir it into the cheese mixture and tip into the dish. Grate over the remaining cheese, top with the tomato clusters and bake for 30-35 minutes until risen and golden. Cool and allow to settle a little before serving.
