- - Cook your tater tots and bacon according to the bag's instructions. Make sure not to over cook as both will be going into the oven for another 35 minutes or so. Bacon should be crumbled after. - Slice up your chicken sausage links, and pan fry them with two chopped onions. Once they are done, add them to a casserole pan. - In a small mixing bowl, crack your eggs, and add your milk. Mix until fully blended, add your hot sauce, and spices. Once the mixture is thoroughly mixed, pour it over your sausage and onions. Then, line the pan with your cooked tater tots. - Once lined, sprinkle with 8 ounces of cheese and crumbled bacon, and cook in a 375 degree oven for 30 minutes. Once your casserole has cooked for 30 minutes, add the remaining 8 ounces of cheddar-cook for an additional 5 minutes. Sprinkle with fresh chives before serving.

- Preheat the oven to 425 degrees F (220 degrees C). Spray a 9x12-inch baking dish with cooking spray.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and let cool.
- Heat the same skillet over medium-high heat and add sausage. Cook and stir until browned and crumbly, 5 to 7 minutes. Remove from heat. Crumble cooled bacon.
- Place potato nuggets in the bottom of the prepared baking dish, distributed evenly. Drizzle evenly with melted butter. Sprinkle with 1 1/2 cups of Colby-Jack cheese.
- Mix eggs, milk, onion, 1/2 of the bacon and sausage, mustard, salt, and pepper together in a bowl. Pour into the baking dish. Add remaining Colby-Jack cheese, bacon, and sausage.
- Bake in the preheated oven until set and cheese is melted, about 1 hour. Let cool for 15 minutes before serving.

- Preheat the oven to 450 degrees F (230 degrees C).
- Cook bacon in a large cast iron skillet over medium-high heat until crispy on both sides, about 10 minutes. Place on a paper towel-lined plate and set aside, keeping the bacon grease in the skillet.
- Reduce the heat to medium and add potato nuggets to the skillet. Season with garlic salt and toss until evenly coated. Cook until the outsides are crisp, about 10 minutes, turning carefully with a spatula once or twice. Remove the skillet from heat.
- Carefully remove 1/2 of the potato nuggets from the skillet and spread out remaining nuggets in a single layer. Top with 1/2 of the Cheddar cheese. Place remaining nuggets on top of the cheese and top with remaining cheese.
- Transfer the skillet to the preheated oven and bake until nuggets are warmed through and the cheese is melted and starts to turn golden brown, about 10 minutes.
- While the nuggets are baking, crumble the cooked bacon. Remove the skillet from the oven and top with crumbled bacon, sour cream, and green onions.

- Set oven to 350 degres.
- Butter a 13 x 9-inch baking dish.
- Heat oil in a large skillet over medium-high heat; add in the sausage meat with chili pepper flakes (if using) onions and garlic, stir with a wooden spoon breaking up the meat, cook until well browned (about 10-12 minutes) drain the fat, then add in about 1/4 cup Parmesan cheese; mix to combine.
- Spread the mixture into the baking dish.
- In a bowl mix the soup with evaporated milk, then pour over the sausage mixture in the baking dish.
- Sprinkle grated cheddar cheese over the soup.
- Top with the potato nuggets evenly over the cheese.
- Sprinkle the top of the nuggets lightly with seasoned salt and black pepper, then sprinkle with Parmesan cheese to taste.

- Preheat oven to 350 degrees F (175 degrees C).
- Spread the sausage, bacon, or ham evenly in the bottom of a 9x13 inch pan. Spread cheese over meat. I use 4 cups of cheese, but you can use less if you prefer to reduce the calories.
- In large bowl, beat together milk and eggs. Pour over cheese. (May be refrigerated overnight at this point).
- Top with frozen tater tots.
- Bake in preheated oven for 45 minutes. Some ovens may take more or less time. Cool for 5 to 10 minutes before serving.

- Cook bacon in a large skillet until well done and crispy. Remove from pan along with excess fat, leaving behind about 1 tablespoon of bacon fat. Saute onions and peppers in pan for two minutes.
- In a bowl, mix sausage, bacon (saving behind a few bits for topping), peppers and onions until combined. For a cheesier bake, add an extra 1/2 cup of cheese here. In a separate bowl, whisk eggs, milk, garlic powder, salt and pepper.
