ALMOND FLOUR CHOCOLATE CHIP COOKIES

These soft, chewy cookies are studded with little morsels of chocolatey heaven. They are also completely gluten-free and grain-free thanks to the almond flour.

Almond Flour Chocolate Chip Cookies image

Steps:

  • Evenly position 2 racks in the middle of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment.
  • Whisk the almond flour, baking soda and salt together in a large bowl. Beat the butter and brown sugar in another bowl with an electric mixer on medium-high speed until light and fluffy, about 4 minutes. Add the eggs to the butter mixture one at a time, beating after each addition to incorporate, then beat in the vanilla. Reduce the speed to low, add the flour mixture and beat until just incorporated. Fold in the chocolate chips.
  • Scoop 12 heaping tablespoons of dough onto each prepared baking sheet, spacing them 2 inches apart. Roll each into a ball with slightly wet hands, then sprinkle the top of each ball with some sea salt. Bake until the cookies are golden but still soft in the center, 10 to 12 minutes. Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely, about 30 minutes.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine butter, white sugar, brown sugar, eggs, vanilla extract, and almond extract in a large mixing bowl; beat with an electric mixer on medium speed until thoroughly mixed.
  • Combine flour and baking soda in a separate bowl; gradually add to the butter mixture, mixing until incorporated. Stir in white chocolate chips, cherries, and almonds. Drop teaspoonfuls of dough onto ungreased baking sheets.
  • Bake in the preheated oven until golden brown, 12 to 15 minutes.

Steps:

  • Preheat oven to 350°F.
  • Mix flour, baking powder, and salt in a bowl set aside.
  • Cream your butter, then slowly add your sugar. Blend well.
  • Add your eggs,vanilla and almond extract.
  • Slowly blend in flour mixture. Add your chips, drop by teaspoonful onto cookie sheet.
  • Bake for about 10 minute.

Steps:

  • Preheat oven to 350F/180C. Grind almonds in a food processor until fine (should yield approximately 2 cups of ground almonds). Set almonds aside. Sift together flour, salt, and baking soda in a medium bowl and set aside. Cream together butter and sugar in a large bowl with an electric mixer. Add eggs and beat to combine. Beat in almond extract. Add flour mixture and ground almonds and stir to combine. Stir in chocolate chips and dried cherries. Use a #20 scoop to portion out dough (if you don’t have the scoop, make balls containing a little over 3 tablespoons of dough-about the size of a golf ball) and place 3 inches apart on ungreased nonstick cookie sheet. Use your fingers to flatten down dough to the height of a half an inch. Bake for 12-13 minutes or until light golden brown around the edges. Cool on pan for five minutes, then remove to wire rack to cool completely. Baker’s note: Use regular sized chocolate chips to get a full chocolate burst in each bite.

  • Using a handheld or stand mixer with a paddle attachment, beat the butter on high speed until creamy, about 1 minute. Switch mixer to medium speed and add the the sugar, vanilla and almond extracts. Scrape down the sides and the bottom of the bowl as needed. With the mixer running on high, slowly drizzle in 1 Tablespoon of the cherry juice. Beat for 1 minute on high. Turn the mixer off and pour the flour into the wet ingredients. Turn the mixer on low and slowly beat until a very soft dough is formed, then, with the mixer still running on low, add the chopped cherries. Beat just until the cherries are disbursed in the dough. Press the dough down to compact it and tightly cover with plastic wrap to chill until firm, at least 4 hours (and up to 3 days). If the cookie dough is not sufficiently chilled, your cookies will spread.
  • Preheat oven to 350°F (177°C). Line two baking sheets with parchment paper or silicone baking mats (silicone mats preferred to reduce spreading). Shape the cookie dough into balls. Mine were about 1 Tablespoon of dough per ball. Make sure they’re nice and smooth. If you find that the balls of dough are sticky and/or have gotten a little soft after rolling- place the balls of dough back into the refrigerator to firm up. You absolutely DO NOT want soft dough.
  • Bake for 11-12 minutes, or until very lightly browned on the edges. The cookies will puff up and spread slightly. Do not overbake. In fact, I only baked mine for 10 minutes. I prefer them a little soft. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack. Allow to cool for at least 30 minutes before drizzling with white chocolate. Melt the white chocolate in a double boiler or in the microwave, in 20 second increments, stirring after each increment until melted. I used a plastic condiment bottle to drizzle the melted white chocolate.
