MARASCHINO CHERRY NUT BREAD

This is a maraschino cherry bread recipe I got from my mother-in-law. It's simple, delicious, and makes great gifts. Freezes well.

Maraschino Cherry Nut Bread image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan.
  • Combine sugar, shortening, eggs, and salt in a large bowl; beat with an electric mixer until well combined.
  • Mix flour and baking powder together in a medium bowl. Add flour mixture to shortening mixture in 2 or 3 batches, alternating with maraschino cherry juice, mixing batter well after each addition.
  • Cut each cherry into 4 pieces; stir into batter with pecans. Spoon mixture into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pan for 10 minutes. Run a table knife around the edges to loosen and invert loaf onto a wire rack. Let cool completely.

Steps:

  • Drain cherries, reserving 1/4 cup juice; set aside. In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk eggs and reserved juice; stir into dry ingredients just until moistened. Fold in the walnuts, chocolate chips, dates and cherries., Spoon into three greased 5-3/4x3x2-in. loaf pans. Bake at 325° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to a wire rack to cool completely. Wrap and store for 24 hours before serving.

Steps:

  • Preheat the oven to 350 degrees F. Spray two 6-by-3-inch miniature loaf pans with cooking spray; set aside.
  • Place the banana chips in a large zip-top plastic bag. Press out the air and seal. Using a rolling pin, roll over the chips until crushed.
  • Whisk the muffin mix and cocoa in a large bowl. Add the chocolate milk, oil and eggs, stirring until smooth. Stir in the crushed banana chips and chocolate chips. Divide the batter evenly between the pans.
  • Bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pans on a rack for 20 minutes.
  • Meanwhile, make the glaze: Mix the confectioners' sugar, heavy cream and banana extract in a small bowl. Drizzle the glaze over the loaves and let cool completely.

Steps:

  • Heat cherries and brandy in saucepan over low heat just until mixture starts to simmer.
  • Remove from heat; let stand 5 minutes for cherries to soften.
  • Heat oven to 350 degrees.
  • Coat 3 mini loaf pans (6x3x2") with nonstick cooking spray.
  • Mix together flour, baking soda, baking powder, salt and allspice in large bowl.
  • Beat together eggs and sugars in medium-sized bowl until well blended.
  • Beat in buttermilk and oil.
  • Make a well in center of flour mixture.
  • Add egg mixture to well.
  • Stir with a wooden spoon just until the flour mixture is evenly moistened and better comes together.
  • Fold in walnuts and cherries with their soaking liquid from the saucepan.
  • Divide batter equally among prepared mini loaf pans.
  • Bake in 350 degree oven for 30-40 minutes or until wood pick inserted in centers of loaves comes out clean.
  • Let loaves cool in pans on wire rack for 10 minutes.
  • Turn loaves out onto wire rack to cool.
  • NOTE: You can bake 1 9x5x3" loaf.
  • Bake at 350 degrees for 60-65 minutes.

  • cream butter & sugar together until pale
  • Mash banana's mix in beaten eggs
  • mix wet ingredients into the butter, fold together
  • fold in the flour, fruit don't worry if it looks a little curdled just mix a little more.
  • Spoon into 1x2lb loaf tin or 2x 1lb loaf tin. Bake for 1 hour 150 c or until a skewer comes out clean. When cool wrap in baking parchment and store in a cool cupboard or freeze.

  • In a large bowl, combine the flour, baking soda, and salt; set aside. Place the bananas in another large bowl and mash them well with a whisk or a potato masher or a fork. Add the brown and granulated sugars and the melted butter and beat with an electric mixer or a whisk until well blended (there will be little bits of banana that don't get perfectly smooth). Beat in the eggs one at a time, and then beat in the vanilla. Add the dry ingredients, switch to a spoon, and stir just until the flour is incorporated.
  • Spoon the mixture evenly into the tins (they will be fairly full), and bake until a wooden skewer inserted into the middle of the mini loaves comes out clean, about 25 to 28 minutes. Let cool for a few minutes in the tins on a wire rack, then turn the little loaves out onto the rack to finish cooling. Serve warm or at room temperature.
