MALTED "FOREVER" BROWNIES
Steps:
- Preheat the oven and prepare the pan: Arrange an oven rack in the center position and preheat the oven to 350°F. Line an 8 × 8-inch pan with 2 sheets of foil, crossing one over the other and pressing the foil into the corners and up the sides. Lightly butter the foil and set aside.
- Bloom the cocoa: In a large heatproof bowl, whisk the cocoa powder and ¼ cup boiling water (4 oz / 113g) until smooth (this will bring out the flavor of the cocoa).
- Melt the chocolate, butter, and oil: Add the semisweet chocolate, butter, and oil to the bowl with the cocoa mixture and set it over a medium saucepan filled with about 1 inch of simmering (not boiling) water (make sure the bottom of the bowl isn't touching the water). Warm the mixture gently, stirring occasionally, until the chocolate and butter are melted and the mixture is smooth. Remove the bowl from the heat and let cool until lukewarm.
- Add the sugars and egg: Whisk the granulated and brown sugars into the chocolate mixture. It will look grainy and you might see some of the fat start to separate from the rest of the mixture, which is normal. Add the whole egg, egg yolks, and vanilla and whisk vigorously until the mixture comes back together and looks very thick, smooth, and glossy.
- Add the dry ingredients: Add the flour, malted milk powder (if using), and salt and whisk slowly until everything is combined, then whisk more vigorously until the batter is very thick, a full 45 seconds.
- Fold in the chocolate and bake: Add the milk chocolate to the batter and fold with a flexible spatula to distribute. Scrape the batter into the prepared pan, spreading in an even layer all the way to the corners.
- Bake the brownies until the surface is shiny and puffed and the center is dry to the touch but still soft when pressed, 25 to 30 minutes.
- Cool, chill, and cut: Allow the brownies to cool in the pan until they are no longer hot, about 1 hour, then refrigerate until the bottom of the pan feels cold, about 1 hour longer (this results in a chewier texture). Use the ends of the foil to lift the brownies out of the pan and transfer to a cutting board. Slice the brownies into 16 squares.

I came up with this brownie recipe after being overwhelmed with cherries on our tree this year. It has the taste of a chocolate-covered cherry.

- Mix sugar, oil, and almond extract together in a large bowl until well blended.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Melt butter in the microwave, about 1 minute. Stir in sugar and cocoa powder. Blend in eggs one at a time using an electric mixer; add vanilla extract. Combine flour (see Cook's Note), baking powder, and salt in a small bowl and add to batter. Mix until well combined and pour into the prepared baking pan. Level with a knife or spatula.
- Beat together cream cheese, sugar and 1 egg in a second bowl until smooth. Dollop the cream cheese mixture on top of the brownie batter.
- Separate cherries from the the jelled filling and dollop them over the cream cheese mixture, saving leftover jelly for another use if desired. Swirl together using a knife.
- Bake in the preheated oven until brownies are set and edges pull away from the sides of the pan, 35 to 45 minutes. Remove from oven and cool thoroughly before cutting into bars.

- Preheat the oven to 350 degrees.
- Lightly grease a 9 x 13 inch baking dish.
- Combine the melted butter, sugars and vanilla in a large bowl.
- Beat in the eggs, one at a time, mixing well after each until thoroughly blended.
- Sift together the flour, cocoa powder and salt.
- Gradually stir the flour mixture into the other mixture until blended.
- Stir in the chocolate chips.
- Spread the batter evenly into the prepared baking dish.
- Bake in preheated oven until a toothpick inserted into the center comes out clean, approximately 35-37 minutes.
- Remove and cool pan on a wire rack before cutting.

CHERYL'S BROWNIES
I don't know why but somebody made these special and they always seem to be different. Very good. Maybe its the liquor.

- 1. In saucepan, melt butter and brown sugar. Transfer to mixing bowl. Beat in eggs, one at a time. Mix in vanilla and 1/4 c. liqueur. Combine flour, cocoa and baking powder; stir into batter mixture until smooth. Add walnuts. Pour into greased and floured 9 x 13 baking dish.
- 2. Bake at 350 degrees just until sides begin to shrink from pan. approx. 25 to 35 minutes. Do not over bake. Remove from oven and burs top with 2 tbsp liqueur.
- 3. Frosting: Cream 3 Tbsp butter. Add 1/2 pound powdered sugar and 3 tbsp cocoa. Beat in 3 tbsp creme de cacao liqueur. With mixer running, add 2 tbsp hot coffee. Whip until thick and smooth, using additional sugar or corree to correct consistency
- 4. The frosting is optional since these brownies are rich and good without it.
COPYCAT CHERYL & CO. BUTTERY SUGAR COOKIES
These tasty little cookies melt in your mouth. They taste just like he Cheryl & Co. sugar cutouts, however these are made with a cookie press (much easier!!). So good!!

- In mixing bowl, cream together butter and sugar. Add egg, vanilla; mix well. Combine flour, baking powder and salt; add to creamed mixture and mix well.
- Put dough into cookie press with desired plate; form cookies onto ungreased cookie sheets. Bake at 375 degrees for 6-8 minutes or until set, not brown (this part is important! DO NOT OVER COOK!). Cool on wire racks.
- Beat together butter, vanilla and 2 cups powdered sugar in mixing bowl. Add milk. Continue adding sugar in 1/2 cup increments until desired consistency is reached. Add food coloring to all or a portion of frosting and frost cookies. Enjoy!
