CHEX® AND FRUIT BRUNCH CAKE

Steps:
- Heat oven to 350°F. Spray with cooking spray or grease 8-inch square pan. In large bowl, stir together 2 cups cereal and the orange juice; let stand about 2 minutes or until cereal is soft. Stir in oil, bananas and egg. Stir in flour, sugar, raisins, baking soda, cinnamon and salt. Spread in pan.
- Bake about 45 minutes or until top springs back when touched lightly in center. Meanwhile, coarsely crush 1/2 cup cereal. Mix with remaining streusel topping ingredients until crumbly; sprinkle evenly over warm cake.
- Set oven control to broil. Broil cake with top about 5 inches from heat about 1 minute or until bubbly. (Watch carefully to avoid burning.) Serve warm.

- Heat oven to 350°F. Grease bottom and sides of 9-inch square pan with shortening or cooking spray. In large bowl, mix 2 cups cereal and the orange juice; let stand about 2 minutes or until cereal is soft.
- Stir oil, egg and bananas into cereal mixture. Stir in remaining cake ingredients. Spread in pan.
- Bake 35 to 40 minutes or until top springs back when touched lightly in center. Meanwhile, place 1/2 cup cereal in resealable food-storage plastic bag or between sheets of waxed paper; coarsely crush with rolling pin. In small bowl, mix crushed cereal and remaining topping ingredients until crumbly.
- When cake is done, set oven control to broil. Sprinkle topping evenly over warm cake. Broil with top about 5 inches from heat for 1 to 2 minutes or until bubbly (watch carefully to avoid burning).

- Stir together cereal and orange juice in large bowl.
- let stand about 2 minutes or until cereal is soft.
- Stir in oil, egg and bananas.

BLUEBERRY BRUNCH CAKE
This recipe is off of a Wilton 9x9x2" non stick cake pan. It is so good! It looks appetizing, and tastes delicious. We used a 9x9x2" pan, but you could probably use other sizes. Just watch cooking time!

- Preheat oven to 350 F.
- Spray pan with vegetable pan spray.
- Cream butter and sugar in large bowl until light and fluffy.
- Add eggs and vanilla; beat.
- Toss flour, baking powder, baking soda, and salt with a fork.
- Add alternately with sour cream to creamed mixture.
- Mix until smooth.
- Toss brown sugar, cinnamon, and nuts together.
- Pour half the batter into prepared pan.
- Mix blueberries with half the brown sugar mixture and spread over batter; add remaining batter.
- Top with other half of nut mixture.
- Bake 35-40 minutes or until cake tester inserted in middle comes out clean.

- Preheat oven to 350.
- Coat bottom of a 10-inch spring form pan with cooking spray, line with parchment or wax paper.
- Coat bottom and sides with cooking spray; dust with 1 T.
- flour.
- Combine granulated sugar and butter; beat with a mixer at medium speed until well blended (about 5 minutes).
- Add egg and egg white; beat well.
- Lightly spoon flour into dry measuring cups; level with knife.
- Combine flour, baking powder, baking soda and salt in a small bowl; sir well with a whisk.
- Combine the buttermilk, orange juice, lemon rind and 1 t.
- vanilla in another small bowl.
- Add flour mixture and buttermilk mixture alternately to butter mixture, beginning and ending with the flour mixture, Fold in 1 ½ cups blueberries.
- Spoon batter into prepared pan.
- Combine turbinado sugar and nutmeg in a small bowl; sprinkle over batter.
- Bake at 350 for 40 minutes or until toothpick inserted comes out clean.
- Cool in pan 10 minutes on wire rack.
- Remove sides from pan.
- Combine sour cream, yogurt, and 1 t.
- vanilla.
- Serve cake warm or at room temperature with sour cream mixture and a sprinkling of blueberries.

BANANA BRUNCH CAKE
I use this recipe a lot with over ripened bananas. I got it out of an electric cooperative newsletter years ago. If I have overripened bananas, I stick them skin and all in the freezer. When I want to make this, I take them out and defrost them in the microwave. (Per reviewers suggestions, I have doubled the topping ingredients)

Steps:
- Heat oven to 350 and grease 13x9 pan.
- Combine Bisquick, 3/4 cup brown sugar, and cinnamon.
- Add bananas, milk, egg, and oil. Mix well.
- Spread into prepared pan. Combine nuts, 1/2 cup brown sugar, and butter. Sprinkle evenly over batter. (small clumps).
- Bake 30 minutes or until golden brown and toothpick stuck in center comes out clean.
- Cool and enjoy!
