JAPANESE CALPIS YOGURT-FLAVORED DRINK
What is available in Japan is called Calpico, It is sold in a dark bottle. The syrup preserves well in the refrigerator. Make sure you shake the bottle each time you use it in order to thoroughly mix contents and there's no sediment.

Steps:
- Mix in a double boiler the yogurt and the sugar.
- Heat the mixture while constantly stirring for about 15 minutes at 160 degrees F to 175 degrees F. Never let it boil!
- When the syrup is at room temperature, add the citric acid powder and vanilla extract.
- For serving, dilute the syrup with 3 or 4 times more of water or club soda (carbonated water) to your taste. Serve with ice.
- Note: If you buy Calpico, don't mix it using the instructions on the bottle! The recommended proportions are much too strong, and it would be best to cut the amount in half.

CALPIS / CALPICO
A refreshing yogurt based drink that is popular in Japan. Not exactly the same as the real stuff, but very close, and the ingredients are common. If you couldn't find citric acid, but Fruit Fresh is mostly citric acid, and it works fine for this recipe. The syrup will keep in the fridge for at least a few months, if not longer.

Steps:
- Syrup:.
- Combine yogurt and sugar in a small saucepan. Place over low heat, and stir until sugar is dissolved, 3-4 minutes. (Do not boil.).
- Remove from heat, and stir in citric acid.
- Store syrup in refrigerator (I use a mason jar.).
- Calpis/Calpico:.
- Pour water into 2+ cup pyrex measuring cup. Add ice, and stir to chill. Stir in syrup, and pour into glass. Enjoy!
- You can multiply the serving size up to make a pitcher full if you like. Some people prefer more or less syrup, so make a single serving to decide how strong you like it.
