EASY PAELLA
An easy to make paella using chorizo, chicken, and shrimp.

Steps:
- In a medium bowl, mix together 2 tablespoons olive oil, paprika, oregano, and salt and pepper. Stir in chicken pieces to coat. Cover, and refrigerate.
- Heat 2 tablespoons olive oil in a large skillet or paella pan over medium heat. Stir in garlic, red pepper flakes, and rice. Cook, stirring, to coat rice with oil, about 3 minutes. Stir in saffron threads, bay leaf, parsley, chicken stock, and lemon zest. Bring to a boil, cover, and reduce heat to medium low. Simmer 20 minutes.
- Meanwhile, heat 2 tablespoons olive oil in a separate skillet over medium heat. Stir in marinated chicken and onion; cook 5 minutes. Stir in bell pepper and sausage; cook 5 minutes. Stir in shrimp; cook, turning the shrimp, until both sides are pink.
- Spread rice mixture onto a serving tray. Top with meat and seafood mixture.

QUINOA PAELLA
A one-pot wonder inspired by a recipe from Chilean chef Maria Eugenia Terragno. I make this with homemade lean turkey chorizo to cut down on calories.

Steps:
- Cover quinoa with cold water and soak for 15 minutes. Drain and set aside.
- Heat a large saucepan over medium-high heat; add the quinoa and cook, stirring, until toasted, for 15 minutes. Transfer to a bowl and set aside.
- Return pan to medium heat. Add oil and chorizo; cook, stirring occasionally to break chorizo into pieces, for about 10 minutes.
- Add garlic, bell peppers, serrano pepper, onion, salt and pepper. Cook, stirring occasionally, until the vegetables are soft, about 5 minutes.
- Stir in quinoa, both beans, tomatoes, and stock. Bring to a boil, reduce heat to low and cook uncovered until liquid is slightly reduced, around 15 minutes. Remove from heat and cover; let sit for 10 minutes.
- Uncover and stir in parsley. Serve with lemon wedges on the side.

- Bring chicken broth and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes.
- Heat vegetable oil in a large skillet over medium-high heat. Saute onion and garlic in hot oil until onion is translucent, 5 to 7 minutes. Add ground chicken and break into small pieces while cooking until completely browned, 7 to 10 minutes.
- Stir cooked quinoa and diced tomatoes into the chicken mixture; bring to a simmer and cook long enough for the flavors to meld, about 10 minutes more.

- Mix first 2 ingredients until blended; set aside for later use. Cook chicken in large skillet sprayed with cooking spray on medium-high heat 3 min. on each side or until evenly browned. Remove from skillet; set aside. Cut half the red pepper into thin strips; chop remaining pepper.
- Heat dressing in same skillet on medium heat. Add chopped peppers, onions, tomatoes, garlic and 1/3 cup parsley; cook 5 min. or until peppers and onions are crisp-tender, stirring frequently. Add quinoa; cook and stir 2 min.
- Stir in broth mixture. Top with chicken, red pepper strips, ham and peas; cook 5 min. Cover; simmer on medium-low heat 30 min. or until liquid has been absorbed, uncovering for the last 5 min.
- Remove skillet from heat; let stand 5 min. Top with remaining parsley and lemon wedges.

- Remove any visible fat from chicken; with a sharp heavy knife, halve each breast crosswise, cutting through bone. Season chicken all over with 1½ tsp salt, 2 tsp paprika, black pepper, and rosemary.
- Heat oil in a large (12-inch) straight-sided skillet over medium heat. Add chicken to pan; nestle chorizo and garlic around chicken. Cook until chicken is golden brown on all sides, turning chicken and chorizo a few times, 8-10 minutes. Transfer chicken and chorizo to a plate (chicken breast will not be cooked through); leave garlic in pan.
- Split leeks in half lengthwise, then cut into ½-inch slices; immerse in cold water to remove all sand and grit. Carefully lift leeks from water to avoid mixing sand back in; drain well and repeat if necessary.
