CHICKEN BREAST IMPLANTS

Chicken stuffed with feta cheese and baked in a crumb coating. If you ever met the woman that created and named this dish you never would have guessed it. Rachael is one of the shyest but funniest people. We still laugh at the name but it's really good! She always served this as an appetizer, but it will do fine as a main dish.

Steps:

  • Slice each breast long-wise so that it's like a pita pocket.
  • Combine the seasoning with the feta.
  • Dip each breast in the butter so that both sides are covered; then roll in the crackers.
  • Place on a greased baking sheet.
  • Divide the cheese up and fill the pocket of each breast.
  • Bake at 325 degrees for 45 minutes or until chicken is done.

Simple Baked Chicken Breasts image

Steps:

  • Preheat convection oven to 400 degrees F (200 degrees C).
  • Rub chicken breasts with olive oil and sprinkle both sides with salt and Creole seasoning. Place chicken in a broiler pan.
  • Bake in the preheated oven for 10 minutes. Flip chicken and cook until no longer pink in the center and the juices run clear, about 15 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Remove chicken from pan. Pour water into the pan, while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Add more water if needed to dislodge the browned bits; serve alongside chicken.

Cover with plastic wrap to keep things tidy, and with a meat mallet, rolling pin, or your fist, pound the chicken an even thickness. It doesn't need to be ultra thin—just make sure the middle is fairly even with the ends (the chicken will be about 1/2-inch thick).
  • Seal the bag to evenly coat the chicken with the marinade. Place in a pan or bowl to catch any drips. Let the chicken marinate at room temperature for at least 30 minutes, or refrigerate it to marinate for up to 8 hours (5 to 6 hours is ideal). Even 15 minutes is better than nothing!
