CHICKEN BREASTS, ROASTED BACON, PEARS IN MUSTARD CREAM

This looks so elegant and different! Use when pears are sweet and in season. Originally found on mealsforyou. *I have included my way of cooking bacon, & never make it any other way any more.* Add about an extra 15 minutes to cooking time.

Chicken Breasts, Roasted Bacon, Pears in Mustard Cream image

Steps:

  • Preheat oven to 400ºF.
  • In medium skillet over medium heat, place bacon and cook until crisp, about 3 minutes.
  • *(My way of cooking bacon is to roast it in a 400ºF oven, for about 15-20 minutes until the bacon is crispy. Lay on paper-towel lined plate and allow to cool.)*
  • Add onion and garlic; cook until very soft and sweet, about 8 minutes.
  • Stir in mustard, cream and white wine. Add crumbled bacon pieces. Taste for seasoning.
  • Place pear slices in the bottom of 9"x13" glass baking dish. Place chicken breasts on top of pears.
  • Spoon mustard sauce over chicken; sprinkle with chopped thyme.
  • Place chicken in oven and bake 40-45 minutes, until chicken is brown and cooked through and pears are tender. Baste chicken with sauce as it cooks.
  • Garnish with thyme sprigs, if desired.
  • Serve with fresh asparagus stalks and brown rice.

1 1/2 onions, diced
3 garlic cloves, minced
1 tablespoon coarse grain mustard
1 teaspoon coarse grain mustard
2/3 cup heavy cream
2/3 cup dry white wine (not cooking wine)
2 3/4 seckel pears, cored and sliced
2 teaspoons fresh thyme, chopped
salt and pepper, to taste
fresh thyme sprig

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Mix the cheeses and mustard together. Cut a slit into the side of each chicken breast, then stuff with the mustard mixture. Wrap each stuffed chicken breast with 2 bacon rashers - not too tightly, but enough to hold the chicken together. Season, place on a baking sheet and roast for 20-25 mins.

  • Combine Dijon mustard, paprika, salt and pepper in a small bowl, to make a paste. Spread the paste evenly on both sides of chicken breasts. Set aside.
  • In a large skillet, cook chopped bacon on medium-high heat just until it starts to brown. Remove to a plate, leaving bacon fat in a skillet. To the same skillet, add chopped onion and cook in bacon fat until softened. Remove to the same plate, with bacon.
  • Add 1 tablespoon olive oil to the same, now empty, hot skillet. Cook chicken breast (with mustard paste on it), on medium heat, about 1.5 minutes on each side. The chicken will not be done as you will continue cooking it in the next step. Remove chicken to a plate.
  • To the same skillet, add 1 and 1/2 cups chicken broth, bring to boil, scraping the bottom of the pan. Add back bacon and onions, mix well. Add back the chicken breast, reduce the heat to low-medium and cook for about 15-20 minutes, turning chicken once, until chicken breast is fully cooked and no longer pink in the center.
