POMEGRANATE, CHICKEN AND FARRO SALAD

This chicken and pomegranate salad is special-simple, yet sophisticated-and never fails to win raves. I use quick-cooking farro, which takes only 10 minutes on the stovetop. Many stores now carry packaged pomegranate seeds in the refrigerated produce section year-round. -David Dahlman, Chatsworth, California

Pomegranate, Chicken and Farro Salad image

Steps:

  • Place farro in large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, covered, until tender, 25-30 minutes. Drain and cool. , Arrange farro, avocados, chicken, apricots, green onions, walnuts and, if desired, jalapeno on a platter. Sprinkle with pomegranate seeds. In a small bowl, whisk remaining ingredients until blended. Serve dressing with salad.

1-1/2 cups uncooked farro, rinsed or wheat berries
2 medium ripe avocados, peeled, pitted and chopped
3 cups shredded rotisserie chicken
3/4 cup chopped dried apricots
1/2 cup thinly sliced green onions
1/2 cup chopped walnuts, toasted
1 tablespoon chopped seeded jalapeno pepper, optional
3/4 cup pomegranate seeds
1/3 cup olive oil
1/4 cup orange juice
3 tablespoons white wine vinegar
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Bring 2 qts of salted water to a boil. Add farro and simmer, stirring occasionally, 45 - 60 minutes, until tender. Drain well and spread on dish to cool. Combine greens, chicken, farro, cranberries, dates, cheese, and salt. Toss w/1/2 c Vinaigrette. Garnish with almonds

1/2 c Farro
6 oz(9 cups) mixed baby greens
1 1/2 c cooked chicken cut into strips
1/3 c chopped dates
1/3 c unsweetened dried cranberries
2 oz Manchego, shaved w/peeler
1/4 t salt
3/4 c Champagne Vinaigrette
1/4 c chopped Marcona almonds

Farro and Fresh Grape Chicken Salad image

Steps:

  • Combine the broth, farro, herbes de Provence and ½ teaspoon of the salt in a large saucepan over high heat. Bring to a boil, reduce the heat to a simmer, cover and cook until farro is tender, about 45 to 50 minutes. Stir in the zucchini, cook 1 minute and drain. Transfer to a large bowl and add the chicken, grapes, almonds and parsley to the farro.
  • In a small bowl, whisk together the lemon juice, zest, mustard, olive oil, pepper and remaining salt. Pour the lemon juice mixture over the farro salad and toss. Serve warm or at room temperature.
  • Serves 8.

I make a similar dish with rice and decided to substitute it with farro. We all loved it! I serve this with a side of crusty bread with butter and a salad.

One-Skillet Italian Chicken, Spinach, and Farro image

Steps:

  • Heat a skillet over medium heat and grease with cooking spray. Cook chicken and onion until chicken is cooked through and no longer pink in the center, 5 to 10 minutes. Remove chicken.
  • Pour chicken broth into skillet and bring to a boil. Stir in farro. Cover, reduce heat, and cook until most of the liquid has been absorbed, 15 to 20 minutes. Return chicken to skillet. Stir in diced tomatoes with liquid, spinach, basil, and parsley. Season with salt and pepper. Reduce heat, cover, and simmer for 5 to 7 minutes. Remove from heat. Let stand for 3 to 5 minutes, covered.
  • Serve topped with Parmesan cheese.
